Potato Masala Recipe / Poori Masala

This potato masala is one of the easiest masalas that can be made! Although it is very simple to make, it tastes absolutely yum! This is usually made as a side dish for poori but I like to make it for my daughter every now and then. Potaotes are one of the very few vegetables that she eats so I make this with very little spice. You can increase the spice level.


  • Potatoes - 3
  • Onion - 1
  • Tomato - 1
  • Green Chillies -1 
  • Turmeric powder - 1/2 tsp
  • Coriander leaves - 1 to 2 tbsp (chopped)
  • Salt - to taste

To Temper

  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - few

1. Pressure cook the potatoes until soft and well cooked. I left it for around 7 - 8 whistles.
2. Once cool, peel the potatoes and mash them well.

3. In a pan, add oil. Once the oil heats up add mustard seeds, cumin seeds. When this splutters add the urad dal and curry leaves.

4. Add the onions and green chillies. Saute until the onions turn translucent. 

5. Add the tomatoes and saute until the tomatoes are well cooked. 
6. Add turmeric powder and salt and mix well.

7. Add the mashed potatoes, add little water and cook till the masala reaches a semi thick consistency. 
8. Garnish with coriander leaves and switch off.

1. You can add ginger garlic paste.
2. Add more green chillies and slit the chilli and add for more spice.
3. You can add vegetables like peas, carrots etc
