Eggless Vanilla Cake
This is one of my favorite eggless vanilla cake recipes. Whenever I need to bake the egg free vanilla cake, I bake this one or this other egg free vanilla cake which uses vinegar and not yogurt. I even made this Christmas tutti frutti cake with this recipe. It's a soft, moist and delicious cake that you will definitely love.

Fudgy Eggless Brownies
I love fudgy chewy chocolaty brownies and I have plenty of recipes of such kind of brownies with eggs. I have posted 2 eggless brownies so far and both are fudgy and chocolaty, just the way I like it! This time I reworked my eggless brownie recipe and ended up with this super fudgy egg free brownie! I loved it! And most importantly my husband who is not fond of chocolates, loved it too!
The most important thing with baking brownies, is when to switch off!! Brownies should never be baked through and through like cakes. It should always be removed when there are a few crumbs sticking to the skewer. I usually bake my brownies only for 25 minutes but for this brownie I had to bake for about 35 minutes. The only thing I would say about this recipe is, keep an eye on the baking time. Do not over bake.
Here are my other two eggfree brownies - eggless brownies, eggless brownie muffins.

Wacky Chocolate Cake | Chocolate Crazy Cake
If you're looking for an easy, no work, egg free chocolate cake then look no further than this recipe! This is the simplest chocolate cake ever and it tastes so good too! This cake does not use eggs, butter or milk, all ingredients will be easily and readily available in your kitchen! Apparently this cake was created as a result of rationing during World War II when milk, eggs, butter were scarce.
The method of preparing this cake is also very easy and different. There is no need to line or grease the tin. You just have to add all the dry ingredients in the cake pan, make 3 wells in the dry ingredients and then add the 3 wet ingredients, mix well and bake!! It doesn't get easier than that!
But I was baking this cake for guests who were coming home and I did not feel the need to risk having the cake stuck to the pan!! So I lined my pan and prepared the batter in the conventional method.
This cake is pretty similar to the other dairy free eggless chocolate cake in my blog. Just as that cake, this cake tastes great with any frosting. I used whipped cream, you can use buttercream or ganache too or any other frosting.

Brownie Mousse Shots
It was mela time again at my husband's office and like last year my husband was putting up a food stall and we were brainstorming on what to make this year. I wanted to make something different from last year's egg free marble cupcakes so we settled on some dessert instead of cakes/cupcakes.
And after much contemplation we decided on these mousse shots and it ended up to be a great decision! These mousse shots were the first to disappear and I was even stopped by his CEO and appreciated for the fantastic taste of these shot! I was very happy to have made my husband proud!!
I made this egg free since my husband wanted only egg free desserts. You can choose brownies with eggs and mousse with eggs too.
There is another brownie + mousse combination in my blog which is totally yum, check out this chocolate mousse brownie recipe.

Eggless Brownie Muffins
I made some brownie muffins for a potluck that I was going to but one of my friends is a vegetarian and for her, I made one batch of egg free brownie muffins so she won't be left out. I was looking at many recipes and finally settled on this recipe from tarla dalal.
I almost did not post this recipe since these muffins sink a little bit. But then these muffins tasted so good that I thought it would be such a loss if I don't share it with the world! So if you don't mind some slightly sunk in muffins then go for it! These are absolutely fudgy and extremely delicious!

Eggless Tutti Frutti Cake
Somehow tutti frutti cakes are associated with Christmas in South India. Maybe because of the colorful tutti frutti! I'm not a big fan of tutti frutti but occasional do add it to my bakes.
This cake, I made it specially for our help at home. I could not give him any of the other Christmas cakes that I baked as it all got over soon! So I made this specially for him and for his family.
This is a very delicious super moist and soft cake. You cannot and will not miss the egg! I already have an eggless vanilla cake recipe which uses oil and vinegar but I wanted to try an eggless recipe without vinegar but yogurt. You can check out this recipe here - eggless vanilla cake with yogurt. My verdict, both cakes are absolutely delicious and soft.

Chocolate Peanut Butter Cheesecake - No Bake and Eggless
Ever since I saw this recipe in smitten kitchen, I have been desperate to make my own version of chocolate peanut butter cheesecake. I was so desperate that I even started dreaming about it! But I don't make cheesecakes for my family because I will end up eating the whole thing myself! So I waited patiently for an opportunity to make this cake! Then finally I made this to take it to my cousin's house!
I always make the non bake type of cheesecake and use cottage cheese instead of cream cheese and we simply love it!
This cheesecake was no different. I loved every bite of it! Soft, silky, smooth, rich and delicious! I made this cake some time back and now looking at these pictures, makes me crave for just one more slice!

Eggless Carrot Cake
Carrot is one of my most favorite vegetable. Even when I was young, carrot was a vegetable that I ate without cribbing. I think I must have eaten only drumsticks, potatoes and carrots as a child! I love adding carrots to my bakes, I have already posted lots of recipes using carrots and the carrot cake that I have posted already is one of my most favorite cakes, only next to chocolate cakes!
This time I wanted to try out an egg free version of carrot cake and I must say, you can never go wrong with carrots. The flavor is pretty deep and intense especially with the cinnamon and nutmeg. I love to bake my carrot cake a day in advance and let it rest for 24 hours and then all the flavors seep in and infuse making it delightfully delicious!

Eggless Chocolate Cupcakes
There was a day when I never baked without eggs but now I find it so easy and simple to bake without eggs! And it turns out so well! One of my most favorite chocolate cake is this egg free dairy free chocolate cake and this mini egg free dairy free chocolate cake! These two cakes are so simple to put together and it's so light and moist!
These cupcakes tastes just as good as my egg free cakes - soft, light and moist! You will not miss the eggs!
I made these cupcakes and the Zebra Cake for my dad's office to celebrate my mum and dad's anniversary and everybody at his office simply loved it! Almost as soon as the cupcakes reached, I got calls to tell me how delicious it is! I topped it with some chocolate buttercream which went very well with the cupcakes.

Mango and Chocolate Entremet
I never thought I will be making an entremet, I thought it was a complicated and laborious dessert and I did not have the time to make one! But then, I participated in Subashini's Bake it Perfect event in her fondbites bake along facebook group and I cleared the 1st round. I had chosen 'Healthy Bakes' as my topic and I made Millet Cookies. For the finals she wanted us to make an entremet, and so here I am with my first ever entremet!
Update - I won the event!! I won, I won!! Hurray!! I won the first place!! I am so thrilled!!
So what is an entremet? It is a French dessert which has a little bit of everything, something 'cakey', 'crunchy', 'moussy', 'creamy', 'fudgy', jelly! Each of these layers should come together to give you a perfectly delicious dessert. Entremet can be simple to complex, I have chosen a very simple and easy entremet that everybody can make, it only takes time to put together. Take your time and follow my schedule and you will not feel stressed making this dessert.
As I was going through countless recipes online, I found that almost every recipe was complicated, with no images. I believe pictures help you understand better so I have used a lot of pictures for better understanding. Also I found that I don't have access to half of the ingredients used and I have never heard of the other half of it!!! So my next agenda was to make an entremet with easily and locally available ingredients.
The components of this entremet are
I have two small kids aged 4 and 2 years and I cannot afford to work at a stretch, so here's the schedule I followed.
Day 1 - Bake the cake in the morning and make the cheesecake in the evening or night.
Day 2 - Chocolate mousse in the morning, mango jelly in the evening and glaze at night.
Next day cut and enjoy! This way you also give each layer enough time to set very well. You can make the glaze on Day 3 too but the mango jelly is very simple to make hence I have put 3 layers to make on Day 2
