Mutton Salna

Mutton Salna is a tasty, finger licking side dish for roti, parotta or biryani. I made a simple and easy version of salna and it is very tasty! You can have this with dosa too. Usually the salna is a little watery, but I made this slightly thick in consistency as we were having this as a side dish for roti. Mostly salna is made with bony pieces of mutton as that tastes the best! You can make the same with chicken as well.

Suvarotti Soup | Munneeral Soup

Suvarotti or Lamb spleen is one of the highest source of iron content. This soup is mostly given to people recovering from major surgeries, who have lost a lot of blood or to those whose haemoglobin (Hb) is extremely low. 
Recently my father in law had an Open Heart Surgery and his Hb levels dropped to 6 and the doctors suggested blood transfusion and we gave him this soup for 10 days and his Hb levels rose up to normal without any blood transfusion! Mind you, my father in law is a strict vegetarian but still he had this soup and it worked really well.

Years ago the same thing happened to me. After a major surgery my Hb count came down to 7 and my doctors also suggested blood transfusion but my parents gave me this soup and my Hb rose to normal without any transfusion.
This is such a wonderful soup so full of iron and very good for health.

Aatu Kaal Soup | Lamb Leg Soup

This is another healthy and delicious lamb that my mum makes. Apart from this soup she also makes aatu margandam soup and aatu kaal paaya. All these lamb soups are high in fat content hence very healthy for kids. The adults in the family don't like to have this soup because of it's high fat content so we make this soup especially for the kids. My nephew likes to drink the soup as it is but my fussy kids don't drink soup so I mix with rice and give them soup rice!

Eeral Varuval | Lamb Liver Roast

Lamb is the only red meat we eat and this liver is very nutritious, full of viatmins, iron and protein. Growing up I was a very fussy eater but still this eeral varuval was one of the things that I would eat. This dry curry that my mum makes is quite tasty and we love it at home!
One of the things to remember about eeral is that, it needs to be cooked fresh. If it's old or if you've bought and kept in the freezer at home, it gets very rubbery after it's cooked. So always buy fresh eeral and cook it fresh too.
This dish is similar to the mutton pepper fry and the chicken chukka varuval I have posted already.

Lamb Rib Soup | Aatu Margandam Soup

Lamb ribs soup also called as margandam soup in Tamil is one of the tasty and healthy soups of olden days. Now a days, many people don't take this soup since it's high in fat content. In fact, people are completely avoiding lamb!

But this is one of the very good, healthy soup for kids. My kids don't eat any non veg, I'm still trying to get them to try some non veg dishes. In the meantime, this is one of the soups I make for them. Of course, they don't like drinking the soup so I add it to their rice (just like rasam) and feed it to them.
You can start this for kids above the age of 18 months. But you will have to adjust the level of spice for kids. The proportions given are mildly spicy.

Aatu Moola Masala | Lamb Brain Masala

I have never had a brain fry in my life!! And I'm not too sure if I will ever have some! This is my first experience with it and my mum says I'm too fussy since I was hesitant to even touch it!! But for the sake of my kids, I decided to brave myself and cook some. We were told that it's very good for kids so we made some for them, who never seem to put on any weight. 

I was not sure if my kids will eat it but I was surprised to find that they did not complain at all, of course I never told them it's brain fry and never showed them the brain before it was cooked! Once cooked it looks just like any other dish.

Mutton Kheema Biryani / Lamb Minced Meat Biryani

It was a quiet Saturday morning as I was standing by the window contemplating what to cook for that afternoon lunch... Well, what are weekends without a lipsmacking biryani! This biyani was made on one such lazy relaxed weekend, where everybody was waiting expectantly for a special dish and I did not disappoint them! This biryani was delicious and stayed true to the reputation of biryani!!

Mutton Kheema Masala / Lamb Minced Meat Masala

Kheema masala or minced meat masala can be made with any meat. I have used mutton but you can make the same delicious masala with any meat you prefer. Tastes really good and goes well with with roti, paratha or even dosa. 
This is the way we make but you can add more spices if you prefer. Either way this makes one yummy dish!

Mutton Cutlets

These cutlets make some excellent appetizers / starters. I love this as a snack too, perfect to munch on! These cutlets are flattened round servings of ground meat and flavorful spices that are coated with egg and bread crumbs and deep fried in oil, absolutely yum!
Some people don't grind the meat but we like it ground since it gives a homogenous mix and also I was going to tempt my daughter to eat this by calling this 'vada'! She likes eating medhu vada so I was hoping she will like this cutlet too!

Urundai Kari Kuzhambu / Meat Balls Curry

This curry is one of the tastiest curries you will ever make! This is the Indian version of meatballs in a spicy gravy where the minced goat meat is mixed with spices and cooked in a spicy gravy. This is my mother's recipe and this tasted really good and we enjoyed it thoroughly!

Mutton Pepper Fry Recipe / Lamb Pepper Fry Recipe

This is a lip smacking dish! Very simple but full of flavor. This dish is apparently my grandmother's specialty, I don't remember though. I tried to re create her dish to the best of my ability. 
This tastes absolutely wonderful! We only had a simple rice and rasam but this side dish, really lifted it up to a totally different level. A simple lazy lunch became a delicious lip smacking event!
This is extremely spicy, do adjust the spice level according to your preference.




Ingredients

  • Mutton - 1/2 kg
  • Small onions - 1 Cup
  • Cumin powder - 2 tsp
  • Red chilli powder - 2 tsp
  • Green Chilli - 2
  • Curry leaves - few

To Marinate

  • Ginger garlic paste - 1 tbsp
  • Garam masala powder - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Curd - 1 tbsp
  • Pepper powder - 1 tbsp
  • Salt - to taste

To Temper

  • Oil - 2 tbsp
  • Cinnamon stick - 1
  • Bay leaf - 1
  • Cloves - 3
  • Fennel seeds - 1/4 tsp



Method
1. Marinate the mutton pieces with ginger garlic paste, garam masala powder, turmeric powder, curd, pepper and salt for at least 2 hours.
2. Pressure cook the marinated meat with 1/2 cup of water for 6-7 whistles. Do not add too much water since this is a dry dish.



3. Check if the mutton is cooked well otherwise pressure cook again.
4. In a pan add oil. Wait for it to heat up. Add the cinnamon stick, bay leaf, cloves and fennel seeds.



5. Add the small onions, curry leaves and green chillies and saute until the onions change color. 
6. Once the onions are cooked, add the cooked mutton pieces. (if there is some water remaining, make sure you saute the mutton pieces until the water dries up)



7. Add the cumin powder and red chilli powder. Check for salt. Add more if needed.
8. Close the lid and cook for 5-10 minutes, saute every few minutes until the meat is well cooked along with the spices and is totally dry.

Goes well with plain rice.




Notes
1. The measurements given here, make this dish extremely spicy. Do adjust to your preference.

Mutton Biryani Recipe / Lamb Biryani Recipe

Biryani is a must on weekends and during festival times. We normally go for chicken dishes but on this special occasion we made lamb biryani. We were not disappointed! This tasted too good. 



We made a large batch as we were cooking for the whole family, you can adjust the measurements as per your serving requirements. This biryani is another one of my mother's specialty dishes. I have already posted a chicken biryani recipe. 
I know the list seems long, but don't let that intimidate you, it's actually very simple to make. Do try out this mutton biryani, you will not be disappointed.
