Eggless Christmas Fruit Cake - In this post, we will see how to make a
tasty and delicious Christmas Fruit Cake that is loaded with fruits and
nuts and is also very flavorful! Although we don't use alcohol in this
recipe, the taste of this cake is very much like the original fruit
cakes made with alcohol!
Ingredients
- Butter - 3 tbsp, melted
- Milk - 1/4 cup
- Powdered Sugar - 1/2 cup
- Grape juice - 1/2 cup
- Almonds 2 tbsp
- Walnuts 2 tbsp
- Yellow raisins - 2 tbsp
- Black grapes - 2 tbsp
- Tutti frutti - 2 tbsp
- All purpose flour (Maida) - 1 cup
- Cocoa powder - 2 tbsp
- Baking powder - 1 tsp
- Baking soda - 1/4 tsp
- Cinnamon powder - 1/2 tsp
- Nutmeg powder - a pinch
- Salt - a pinch

Method
Pre heat the oven to 180 degrees C for 15 mins and grease and line a 6 inches cake tin.
1. Take the grape juice and add the black grapes, tutti frutti, yellow raisins and soak for atleast 30 mins.
2. Take the milk and melted butter in a bowl, add the brown sugar and mix well till the sugar dissolves.
3. Place a sieve over the bowl and add the maida, cocoa powder, baking powder, baking soda, cinnamon powder, nutmeg powder and salt.
4. Mix well and sieve it into the bowl. Add the chopped nuts and starting mixing the batter.
5. Now add the soaked fruits along with the juice, mix well.
6. Transfer the batter into the prepared cake tin, spread the batter evenly. Do not tap the batter.
7. Bake the cake in the pre heated oven for 45-50 mins at 160 or 170 degrees C or until a skewer comes out clean.
8. Wait for the cake to cool completely and then remove it from the tin.
9. For best tasting cake, wait for 1 or 2 days before cutting into the cake. Then all the flavors will infuse making the cake taste superb!
Notes
1. Don't soak the nuts in the grape juice. It tastes best when added fresh to the batter.
2. You can use any fruit juice like apple juice or orange juice. I have used grape juice.
3. If you don't have brown sugar, add white sugar.
4. If you get fresh nutmeg, grate it into the batter. That gives a better flavor.
