Eggless Vanilla Cake

Here is a simple and easy eggless vanilla cake that you can make in a jiffy! This cake does not require any fancy ingredients or equipment's. It turns out soft and moist every time!


Ingredients
  • All purpose flour - 1 cup (130 gms)
  • Oil - 1/4 cup
  • Curd 1/2 cup (150 gms)
  • Sugar - 1/2 cup (100 gms)
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Salt - pinch
  • Vanilla - 1 tsp

Method
1. Take the curd in a bowl and add sugar to it and whisk till well combined.
2. Add the baking powder, baking soda and salt and continue to whisk. Set this aside for 5 mins, it will become frothy.
3. After 5 mins, whisk in the oil. Then add the vanilla and whisk again.
4. Pre heat the oven to 180 degrees C for 10 mins. Grease and line a 6 inch round tin.
5. Sieve in the all purpose flour into the wet ingredients.
6. Gently mix the wet and the dry ingredients to make a smooth lump free batter. 
7. Transfer the batter into the prepared tin and tap the tin on the counter to remove the air bubbles.
8. Bake in the pre heated oven for 30-35 mins or until a skewer comes out clean.
9. Remove the tin from the oven and let it cool for 20 mins before removing from the tin.

Notes
1. If the batter is very thick, add 1 tbsp of milk.
