Mushroom Rice

This mushroom rice is a quick and easy lunch box recipe that I make for my kids. I mostly make this mushroom biryani or this mushroom fried rice that they like but if I'm short of time then I make this simple mushroom rice which is equally good and gets done quickly.

MUSHROOM RICE
Preparation time 15 mins | Cooking time 20 mins | Serves 3

Ingredients
  • Mushrooms - 150 gms
  • Uncooked rice - 1/2 cup
  • Soya sauce - 1 tsp
  • Pepper powder - 1 tsp
  • Onion - 1, sliced
  • Garlic - 5, chopped fine
  • Cumin seeds - 1/2 tsp
  • Salt - 1 tsp or to taste
Mushroom Rice

Method
1. Wash and slice the mushrooms and set aside. Cook the rice and set aside to cool.
2. In a kadai, heat the oil and add the cumin seeds to splutter. Then add the chopped garlic and saute for few seconds.

3. Add the sliced onions and some salt and saute till the onions turn translucent.
4. Add the soya sauce and the pepper powder and mix well. 

5. Now add the mushrooms and mix well. Cook for about 5-7 minutes in medium flame until the mushroom gets well cooked. 

6. Add the cooked rice and mix well with the mushrooms. 

7. Add little more pepper powder and mix again.
8. Switch off and serve.

Notes
1. You need not add any water while cooking the mushrooms as the mushrooms will leave water. If needed sprinkle some water.
2. Check out the other mushroom recipes.
3. You can make this with left over rice too.
4. You can add some chilli sauce too.
