Mushroom Fried Rice

Mushroom fried rice is an easy to make lunch box recipe. My kids enjoy taking any fried rice for lunch and I like to make different kinds of fried rice for them. You can make this fried rice with left over rice, normal rice or even basmati rice. I prefer to make it with basmati rice as the flavor of basmati rice take the dish to a whole new level!


Mushroom Fried Rice


MUSHROOM FRIED RICE
Preparation time 20 mins | Cooking time 15 mins | Serves 2-3

Ingredients
  • Uncooked basmati rice - 1/2 cup
  • Mushroom - 100 gms, chopped
  • Capsicum - 1/3 cup
  • Carrot - 1/3 cup
  • Garlic - 4, chopped finely
  • Spring onions - 1/4 cup, chopped
  • Soy sauce - 1/2    tsp
  • Vinegar - 1 tsp
  • Pepper powder - 1 tsp
  • Spring onion greens - 1/4 cup
  • Salt - to taste
  • Oil - 2 tbsp

Method
1. Chop the mushrooms, capsicum, carrots and onion. 
2. Cook the basmati rice and spread it in a plate to cool down.
3. In a kadai, heat the oil and add the chopped garlic. Saute for a minute.

4. Add the chopped onions and saute until it turns translucent.
5. Add the mushrooms and cook for about 5 minutes.

6. Add the capsicum and carrots and cook on high heat for 2-3 minutes.
7. Add the soy sauce, vinegar and pepper powder and mix well.

8. Add the cooked basmati rice and mix in gently.

9. Add the spring onion leaves and mix well and switch off.

Notes
1. You can add other veggies like beans, cabbage or even eggs to this rice.
2. You can use left over rice or normal rice for this recipe.
