Egg Pepper Roast

I have a habit of buying fresh vegetables everyday. We are blessed to have a good vegetable vendor closeby who stocks fresh veggies everyday so I never buy in bulk and load the fridge. The down side of this is when there is an emergency! When there were some untoward news about our chief minister and the entire city shut down in a matter of hours, I was stuck with no veggies to cook!!

However, eggs are so versatile in nature, it always comes in handy when everything else fails. So on this particular day when I was stuck not having any vegetables to cook I made this pepper egg roast and kuthiraivali moong dal khichidi and it was one of the tastiest meals ever!! Simple and easy!

How to make a simple syrup to soak cakes

This is how I soak my vanilla cakes. You can use this same measure to soak the chocolate cakes too. But I normally use grape juice to soak my chocolate cakes.
This is the ratio of sugar to water I use to soak my cakes. I have seen some people use 1 cup sugar and 1 cup water but I find that too sweet and it somehow alters the taste of the cake so this is what I follow and it works well for me!
You need not soak the 'naked' cakes but it's necessary to soak the cake layers if you intend to frost your cakes otherwise it will become dry. Check this post on how to frost cakes easily.

Every strawberry season I have always wanted to try this strawberry oats smoothie but I never do! This year how ever I had a chance to make this delicious smoothie and loved it. It's healthy and tasty and so filling to have for breakfast.

Aloo Matar Paneer

I normally make only matar paneer but one day I had some potatoes that I wanted to use up so added it to the curry and it ended up being very tasty! Since then I make this quite often since potatoes are one of the vegetables my kids enjoy eating.
This goes very well with roti or any rice variety.

Coconut Milk Panna Cotta

Panna Cotta is such a lovely dessert and I love making it. It's rich and tasty and always a winner with my guests. This is also a great dessert for kids. I have made many varieties of panna cotta and this time I wanted to try a coconut panna cotta.

Panna cotta is mostly made with half milk and half cream but you can skip the milk and use only cream too. After we had this panna cotta, we loved the flavor of coconut so much that I followed up with a dairy free coconut panna cotta which also tasted delicious.

My sambar sadam is an easy one pot meal and we enjoy it so much. So I thought why not try the same with millets since I try to include millets 3 times in a week. This is one of the most healthiest meals you can make, loaded with veggies, millets and dal. I even pack this for lunch box and it tastes really good!
Kuthiraivali is called as Barnyard millet in English and one of my most favorite!

Potato roast is the most easiest side dish you can make!! I can't think of anything that is more simpler than a potato roast! I make this quite often since my kids like eating it with curd rice. You can adjust the spice mix as per your requirements. I usually add less spice for my kids and make it more spicy for my husband.

I have baked many many cakes but no butter cake has ever come close to this recipe! Each butter cake I have tried is unique and different and lovely in it's own way but this is my most favorite! On so many levels, this is a wonderful rich and delicious cake. I have baked this cake many times and everybody who had this cake, fell in love with the texture and taste of this cake.

This is easy to bake with simple ingredients and takes no effort at all. Once you bake this cake, you will never want to try another butter cake recipe. The recipe is close to that of a pound cake but it's not dense like a pound cake but light and airy and soft which is what we loved about this cake.

Peas Pulao

I make a pulao every week for lunch box and every time I try to make a different pulao but the most favorite of all my pulao recipes is always the humble peas pulao. I have already posted another recipe of peas pulao that my mother makes in an electric cooker.

This is my version, that I make in a pressure cooker with some garam masala (optional) and coconut milk. Most people don't add coconut milk to pulao but I tell you once you add coconut milk, you will never make pulao without it! Coconut milk makes the pulao so flavorful and delicious that we find a pulao without coconut milk a tad bland!!
