Soya Pulao

Pulao is one of the few dishes that my fussy kids like to eat! So, I make a pulao once every week for lunch box. I make it a different pulao every week to keep it interesting. I make this soya pulao and my kids and their friends like eating the little soya nuggets. I always have a pack of soya in my pantry and if I don't have anything to add to the pulao, I make this soya pulao instead of a making a plain jeera pulao. Check out the other pulao recipes.

One of the things I notice is that, the pulao is never spicy, so to make it spicy add lots of green chillies or add some garam masala to spice it up. And as always with all my pulao recipes, I add some coconut milk which lifts it to a whole new level.

Mango White Chocolate Mousse Cake

Over the years I have made so many mango desserts and still every mango season I am tempted to try something new! Mango is one of my favorite fruits and it's the kind of fruit that tastes great no matter what you do with it!

So this time, I wanted to make this mango white chocolate mousse cake and it turned out to be a huge hit! Everybody whom I shared it with, totally loved it. Although, the adults did not not prefer the biscuit base but the kids enjoyed it! Next time I make this, I'm going to serve it in individual bowls without the biscuit layer!!

I have already made an eggfree mango mousse cake where I've used a chocolate cake base and mango mousse. This tastes completely different with the white chocolate mousse and biscuit layer! The white chocolate is so soft and smooth and silky and completely melts in your mouth! If you don't want to use the biscuit layer, you can use a cake as the base layer too.

Onion Uthapam

I make uthapam quite often, it is a wonderful alternative to the regular dosa. I usually make this on day 3 or 4 of my dosa batter. I make different varieties of uthapam and the easiest of all is this onion uthapam. You can also mix the onion along with the batter and then make the uthapam.
I have a mini uthapam pan which I use to make this, you can use the regular dosa pan too.

Easy Tamarind Rice Recipe | Puli Sadam

I don't make tamarind rice very often, I'm not very fond of it too except when we are travelling!! Nothing beats the tamarind rice with potato roast in train or picnic!! My mom makes a simple tamarind paste which I like and follow her recipe. My mom makes this paste and stocks some in the fridge for later use.

Instant Ragi Idli | Easy Ragi Idli Recipe

I have been looking to include Ragi in our diet, I do make a lot of millet based dishes but I have never been able to make a lot of ragi and kambu. When I came across this recipe, I wanted to try it out and I'm so glad it worked out well and my family likes it! This is an instant idli recipe and it is soft and tastes really good. I had 2 idli's left over and the next day I heated it in a microwave and it was still soft!

The other ragi idli recipes I came across, involved grinding and fermenting the batter and I just did not feel like making those recipes. However, this is an instant idli recipe, easy to make and takes very little time to put together.

Ragi is called as finger millet in english, nachani in hindi and kezhvaragu in Tamil. It is a super food rich in calcium and iron and it's really good to include it in kids diet. I used homemade sprouted ragi flour. If using store bought, make sure you buy a good brand.

How to store Coriander, Curry leaves and Mint for long

Keeping the coriander and curry leaves fresh for atleast a week or two is very important to me. I get very annoyed seeing them spoilt since I use a lot of coriander and it's such a waste to see them go bad. I had been trying many ideas that I read off the internet and nothing worked well for me. One day, my maid suggested this method and I started following it and I find this works better than most of the other ways that I've tried.

  • A container - (preferably glass but even plastic or steel works well)

Mother's Day Cake

I  made this cake for my mum's birthday which is just a few days before Mother's Day but this cake would be wonderful to celebrate Mother's Day too. I got this lovely idea from I am Baker and this isn't extraordinary like her Mother's Day cake but still, my family and me were very happy with this cake. It's easy and simple to make and yet so personal and beautiful!

Egg Pepper Roast

I have a habit of buying fresh vegetables everyday. We are blessed to have a good vegetable vendor closeby who stocks fresh veggies everyday so I never buy in bulk and load the fridge. The down side of this is when there is an emergency! When there were some untoward news about our chief minister and the entire city shut down in a matter of hours, I was stuck with no veggies to cook!!

However, eggs are so versatile in nature, it always comes in handy when everything else fails. So on this particular day when I was stuck not having any vegetables to cook I made this pepper egg roast and kuthiraivali moong dal khichidi and it was one of the tastiest meals ever!! Simple and easy!

How to make a simple syrup to soak cakes

This is how I soak my vanilla cakes. You can use this same measure to soak the chocolate cakes too. But I normally use grape juice to soak my chocolate cakes.
This is the ratio of sugar to water I use to soak my cakes. I have seen some people use 1 cup sugar and 1 cup water but I find that too sweet and it somehow alters the taste of the cake so this is what I follow and it works well for me!
You need not soak the 'naked' cakes but it's necessary to soak the cake layers if you intend to frost your cakes otherwise it will become dry. Check this post on how to frost cakes easily.
