I have already posted a mint rice recipe, this method is mostly used when there is left over rice. Of course this can be made with freshly made rice too. I make this for lunch boxes and it's very easy and simple to make. I normally make the mint paste in the night and cook the rice and prepare the masala in the morning. Tastes awesome and very healthy too!
MINT RICE
Preparation time 10 mins | Cooking time 25 mins | Serves 2-3
Ingredients
Method
1. In a blender, add the washed mint leaves, green chilli and chopped ginger. Add little water and blend to a smooth paste.
2. Cook the rice and set aside. Or you can use left over rice.
3. In a kadai, add the oil. Once the oil heats up, add the cumin seeds and curry leaves.
4. When the cumin seeds splutter, add the sliced onions, green chilli and some salt. Saute until the onions become translucent.
5. Add the turmeric powder and garam masala powder. Mix well. Cook for about 3 minutes.
6. Now add the ground paste and mix along with the masala. Let it cook for 2 more minutes. Do not add any water.
7. Once done, add the rice and mix with the masala.
8. Drizzle the lemon juice and mix well.
Serve with some chips or raita.
Notes
1. You can add cooked peas or potatoes too.
2. If your making this for kids then don't grind the green chilli along with the pudina, add it along with the onion.

- Salt - to taste
- Oil - 2 tbsp
