No Bake Chocolate Biscuit Cake

Here is a simple and easy cake to make for kids that tastes delicious. I made this cake for my nieces who love to eat anything made with biscuits! Even though I am not very fond of biscuit cakes, I must say even I enjoyed eating this cake!
I had bookmarked this recipe years ago and I finally had the chance to make this cake. This is one of the easiest  and tastiest no bake desserts I have made. There are many versions of biscuit cakes and this is one of my favorites.

Karamani Sundal

Black Eyed Peas also known as Cow Peas is called as Karamani in Tamil and Lobia in Hindi. It is high in fibre and low in fat and calories. Lobia is a rich source of protein, iron and potassium too. It's really good to include lobia in our regular diet. You can make a gravy with it or you can make a sundal like this and have it as a snack. This sundal is easy to make, you can pack it for kids snack boxes. I also pack this as a mid morning snack for my husband.

Quick Millet Curd Rice

I make millet based curd rice often and if I am packing it for lunch boxes then I make this varagu arisi curd rice (with whatever millet I have at hand). But if it's for a quick meal then this is the easiest ans simplest curd rice ever. Tastes so delicious and it's such a comfort food! This tastes no different from the normal curd rice (made with rice) and I just love to have this with some pickle!
I made this with kuthiraivali (barnyard millet), you can make it with varagu, thinnai or samai also.

Flax Seed Idli Podi

Flax seeds are known as the wonder food, it has a number of health benefits and including it in our daily meal is very good. It is said to reduce heart disease, diabetes, stroke and cancer. It is rich in fiber, omega 3 fatty acids and lignans. It also helps in digestion and keeps skin and hair healthy. 

The recommended dose of flax seed is 1 tbsp per day. You can have the seed as it is or powder and take it. Adding it to a podi like this is a great way to include flax seeds in our daily diet.

This podi is similar to the usual idli podi I normally make at home with some slight changes.

Carrot Egg Poriyal

Whenever we visit my my mum she always makes this poriyal for my kids and they enjoy eating this so I also started making this poriyal at home. It's easy and simple to make and carrot is a vegetable that is loved by all kids so this always works well!!

Idli Batter in Mixee

My husband and my father in law are such big fans of idli from murugan idli kadai! Me not so much as I don't like idlies too much. But it is true that the idli from this shop is so soft and spongy that even a person like me, who is not fond of idli's, can be tempted to have some.
So when I came across this recipe (which claimed to be murugan idli kadai idli recipe), I wanted to give it a try. I'm sure no hotel will divulge their trademark recipe secrets and I'm also sure there is more to the softness of the hotel's idli than what we are using here. Having said that, this idli did come out quite soft. 
Of course, I still prefer my original recipe for soft idlis but if I want some idli batter quickly then I most definitely give this a go and it always works out well.
I made this in my mixee, you can make it in the grinder too. Probably the grinder will give an even more softer idlis.

Quick Hot Fudge Sauce

This is an easy and quick hot fudge sauce that you can make in a few minutes to pour over your cakes or ice creams. It's easy to make and works well in an emergency. If you've baked a cake and find it to be less sweet, you can pour this over your cake and it will be just perfect! I used this to pour over my chocolate poke cake and everybody loved it so much! Tastes really yum!

Coconut Milk Pulao

Coconut milk enhances the flavor of the pulao. I always add coconut milk to all my pulao recipes. I always prefer the taste of pulao with coconut milk than without it. This time I was making a small batch of pulao just for my kids and I decided to make a coconut milk pulao for them using only coconut milk. This made the pulao so rich and so tasty. You can use half water and half coconut milk too.

Lemon Rice

Lemon Rice is a flavorful, easy and simple rice that you can pack for kids lunch box. Since my kids are very little, they prefer these kind of variety rice in their lunch boxes instead of sambar/kuzhambu rice. Lemon Rice

Lemon rice is also a great option to pack when we have to travel. I remember as a kid, my mom always used to pack lemon rice when we went in train. It was always lemon rice or tamarind rice or curd rice with potatoes whenever we went on vacations. It doesn't spoil and always tastes so flavorful.
You can also prepare this with leftover rice. If you have left over rice, then this is the quickest, tastiest dish you can make!
