Chocolate Buttercream Recipe

I have never been a fan of buttercream frosting so I always hesitate to make buttercream for all my cakes and cupcakes. I always prefer whipped cream and ganache. But I realized that everybody is not like me! There are people who prefer and some who love buttercream! So when I made these egg free chocolate cupcakes for my dad's office I chose to make this chocolate butter cream for them.
I should say this turned out to be delicious! Every body simply loved the cupcakes with this buttercream. I got calls from my dad's office, to tell me how much they loved it!

This recipe makes enough to frost a 8 or 9 inch cake.  I halved this recipe to frost my cupcakes. I got this recipe from an ace baker who runs her own business Sugar Bowl - Candida, who was kind enough to share this recipe! It's such a wonderful recipe to frost a cake and pipe with it too!

Nandu Rasam | Crab Recipes

Crab is one of my most favorite sea food recipes! The best crab dish I have ever tasted is my mom's nandu varuval! It is so spicy and so delicious! We make that dish every time we buy crab. I don't even feel like trying any other recipe other than that one dish. It's my all time favorite crab recipe.

But when ever someone catches a cold in my home, I make this nandu rasam and almost instantly they feel better! I make the same nandu rasam for my kids also when they catch a cold. My kids are very young, age 4.5 and 2.5 years so I make it very less spicy and give them only once a day and even they like it and feel better.

Many people make nandu soup and call it nandu rasam but this is the way we make nandu rasam - with tamarind. You can make this and even drink it as a soup and feel better.

Kuthiraivali Pongal | Millet Recipes

My kids love eating ven pongal simply because it's easy to eat and they can finish it off quickly! Since they prefer pongal, I like to introduce millets to them in the form of pongal. I have made pongal with all the millets and they have not found out the difference at all! They love the millet pongal just as much as they love the regular ven pongal!
I have also posted thinai pongal recipe. This post is pongal made with kuthiraivali or barnyard millet.

Baby Corn Biryani | Easy Biryani Recipes

Usually we have baby corn as it is or in salads but off late I have been adding it in masalas and it tastes great! I've made baby corn masala and baby corn kurma and both were a huge hit in my family. One of the best things for me, as a mother, is my daughter loved to eat baby corn so I wanted to make a baby corn biryani for her. My kids love any biryani and paired with baby corn, this was simply too good! I have even packed this for her lunch box and she loved it!

Eggless Chocolate Cupcakes

There was a day when I never baked without eggs but now I find it so easy and simple to bake without eggs! And it turns out so well! One of my most favorite chocolate cake is this egg free dairy free chocolate cake and this mini egg free dairy free chocolate cake! These two cakes are so simple to put together and it's so light and moist! 
These cupcakes tastes just as good as my egg free cakes - soft, light and moist! You will not miss the eggs!

I made these cupcakes and the Zebra Cake for my dad's office to celebrate my mum and dad's anniversary and everybody at his office simply loved it! Almost as soon as the cupcakes reached, I got calls to tell me how delicious it is! I topped it with some chocolate buttercream which went very well with the cupcakes.

Zebra Cake | How to make a Zebra Cake

Zebra Cake is a treat to the eyes! My kids were so thrilled to see the stripes that my daughter who hardly eats sweet dishes, was tempted to eat a slice! Even adults were excited to see the 'stripey' cake! 
I always bake a marble cake when I want to mix up the chocolate and vanilla batters so this time I tried this zebra cake and some egg free chocolate cupcakes (will post later) for my parent's anniversary and we enjoyed both the cakes immensely! 

Making a zebra cake is pretty simple if you can get the batter right. You need to layer the vanilla and chocolate batters alternately. The most important part of this cake is the batter. The consistency of the batter needs to be right. If the batter is too thin then you won't get the zebra effect right. Check the notes section for more details.

For an Indian especially a South Indian, no meal is complete without curd! Every meal ends with a bit of curd rice. Even biryani has raita made with curd! I think a major portion of Indians cannot survive without curd! I know I can't!!
I simply love love love curd! My perfect comfort food is a delicious bowl of curd rice with appalam and some pickle! Kids too love it!

How to make thick curd

Making curd at home is super simple and easy! And it tastes a million times better. The curd I make is thick, really thick, not even a little bit watery. I set curd at home and it works every time. I hear a lot of stories about store bought curd, that they use setting agents...I don't know if it's true but why go for store bought ones when you can make fresh and delicious curd at home in a few hours!

Curd is one of the basic essentials in an Indian kitchen. You can make buttermilk or lassi during summer and that tastes good too. It is also a very good, natural probiotic and very good for health.

Varagu Arisi Bisibellabath | Millet Recipes

One of my favorite one pot meals is bisibellabath. It's so simple to make and such a delicious rice. Bisibellabath is the fancy cousin of sambar rice. Since we have been including millets in our diet, I thought of trying out this bisibellabath with millets and it turned out to be delicious and a very healthy option too. This has become a regular fixture in our house and I make this bisibellabath with all the millets.

Varagu arisi is called as Kodo Millet in English. Some people add tomatoes to bisibellabath and some don't. I have not used, you can add some tomatoes if you wish.

Thinai Urundai | Thinai Laddu | Foxtail Millet Laddu

This is a simple and easy laddu that can be made quickly. It is very nutritious and it serves as a wonderful snack. For those looking to loose some weight, this laddu serves as a great snack in between meals. This is also a good option for diabetic patients.

I have used honey as a binding agent instead of ghee and honey is also a replacement for sugar. Instead of honey, you can use jaggery (dissolved in water) or use ghee and sugar itself.

Curry Leaf Pepper Chicken

This is a spicy and flavorful chicken recipe, the freshly ground pepper and the curry leaves make this chicken even more flavorful. I have already posted a pepper chicken masala recipe and this is another chicken recipe that we love. I saw vahchef making this recipe and I wanted to try it out. This goes well with roti or dosa or any variety rice.

Pottukadalai Chutney | Easy Chutney Recipes

This is a simple and easy chutney made with pottukadalai called as Roasted Gram Dal in English. This chutney is one of my favorites as it tastes good and it's also very quick to put together. The pottukadalai makes this chutney really yum. My kids and my husband also love this chutney. This goes very well with idli and dosa.
