Instant Microwave Brownie (eggless)

This is by far my most favorite dessert of all time! Simply because it gets ready within 5 minutes and my sudden cravings for chocolate is instantly met. If you are even mildly interested in baking, you will have all these ingredients readily available in your kitchen. It is ridiculously simple to make and wonderful to taste!

According to me, this is the most useful recipe I have procured, as a result of all the hours I have spent browsing through the internet! Since I love chocolate, this recipe comes in very handy in times of emergency and it serves just one or maybe 2 if your in the mood to share (I normally don't share chocolate!), so no feeling guilty for eating too many brownies.

This recipe is available all over the internet as instant microwave brownie or brownie in a mug. I adapted this recipe from Art of Desert. I have made this brownie plenty of times and I have tweaked it to adapt my taste buds.

Chocolate Mousse Recipe ( Eggless)

Chocolate mousse tastes divine! It is light, airy and simply delicious. Mousse with eggs definitely tastes better than those without eggs but I am quite skeptical of eating raw eggs! So because of my paranoia we settled for eggless mousse this time. It is easy and simple to make. I did not use gelatin to set this mousse but you can use if you want to. And I used sweetened whipping cream hence did not add sugar. If your using unsweetened whipping cream, do add icing sugar and whip the cream to stiff peaks.

How to make buttermilk for cakes

Many cake recipes calls for buttermilk. The buttermilk makes the cake or whatever you are baking, more moist. I love recipes which calls for buttermilk and prefer trying them out. 
You can make buttermilk from curd too but for bakes this method is preferred. It is simple, easy and accurate and takes about 10 minutes to make.

Onion Tomato Chutney | Easy Chutney Recipes

Eating idli and dosai becomes so monotonous unless we make side dishes that tastes awesome. And everyday thinking of a side dish is itself is an event! I tasted this chutney at my mother in laws house – she is a great cook and anything she makes tastes delicious! I loved this chutney and since my husband also liked it, this has become a regular in our home.


It is very simple to make with no masalas. You can temper with mustard seeds and add at the end. I always do that or you can serve as it is.

King Fish - Fish Fry Recipe / Vanjaram Fish Fry Recipe


Fish Fry is our favourite. We love any fish fry but mostly prefer Vanjaram because it's easy to eat! Unlike some other varieties of fish, this fish has only a centre bone which is easy to remove. Also it tastes really good so this is a regular in our daily meals.

Marinating the fish is important. When you marinate them well and let it rest for a couple of hours, then the flavours are all soaked in and tastes awesome.

I have already posted Sankara fish fry. The marinade for that is different from the marinade I have used in this recipe. Do check out.



Ingredients


  • Fish                             5 pieces
  • Turmeric powder      1/2 tsp
  • Coriander powder     1 tsp
  • Lime juice                   1 tsp
  • Corn flour                   1 tsp
  • Red chilli powder      3 tsp
  • Salt                              to taste
  • Oil                               to fry








Method

1. Clean and wash the fish.
2. In a bowl mix the turmeric powder, red chilli powder, coriander powder, lime juice, corn flour and salt well.

3. Add the fish pieces to this paste and make sure to coat the fishes well.
4. Let it marinate for a couple of hours.
5. In a kadai, add required oil. Add few pieces of fish at a time and deep fry until the fishes turn golden brown.
6. Remove and place it on tissue paper to absorb the excess oil.

Murungakakai Kara Kuzhambu / Drumstick Curry Recipe

I love drumstick curry, it is my favourite among all the kuzhambu variety. My mum's recipe is absolutely delicious! For some reason I love to eat this with beans poriyal. So we often have murungakai kara kuzhambu with beans poriyal!

There are of course various ways to prepare this curry. Some do not use tomatoes but we use tomatoes to make this gravy. On a leisurely day, we use about 15 shallots to make this. But on a working day, this is made with big onions.

Easy Pressure Cooker Kesari

I know the title intrigues you, well you read it right! This is a recipe to make the kesari in pressure cooker with no stirring! No more lumpy kesari!

I am not a kesari person, any day I would be ready to whip up a batch of brownies to stirring kesari! So when I came across this recipe in a famous facebook group, I was curious to try it out. Add to that my mum wanted me to make some kesari for her so I decided to experiment. Of course I did not let her into the kitchen as she would not have believed this will work! So I only told showed her the pressure cooker kesari after she had some and raved about it!

After trying this kesari, I now make all my kesari's following this same method, although I have changed the recipe and proportions to suit my mum's preference. This is an easy, simple, no fuss, no lumps, no stirring for long, no wastage of gas, fuss free kesari!

Medhu Vadai

Medhu Vadai or ulundu vadai or urad dal vadai as it is popularly called is made by soaking ulundu and grinding it and deep frying the batter. It is crispy on the outside and soft inside. A delicious snack and can be had for breakfast also.


My 2 year old daughter has learnt the story of the crow who took the vadai from the old lady and ever since she wants to eat vadai!! Of course she only eats a few bites but this soft vadai seems to fascinate her and because of her we get to enjoy this delicacy often.

Making this vadai may seem difficult for a beginner but once you get the hang of it, it gets much easier. The difficult part is making the doughnut shape. When  1st made vadai, I never got the shape and made bondas out of the batter! But it gets better with practice. Check the notes section for lots of tips.

Chicken 65

My husband made this Chicken 65 one Saturday and we enjoyed it! Chicken 65 is one of the popular starters around. It is very tasty and loved by all. It is boneless  chicken pieces deep fried in oil. The chicken pieces are marinated in various spices and masalas for a couple of hours and deep fried in oil. Very simple to make and goes well with any rice but mostly had as a starter in many restaurants.

Ever since I started baking I have been searching for the perfect vanilla cake but every recipe I tried disappointed me on some level....until I came across Suma's recipe. Sankara Meen Varuval Recipe / Red Snapper Fish Fry

Today was fish day in our house. Fish is very common in our house and fish fry is prefered to kulambu. We have this as a side dish to any rice or have it just like that! It is that tasty. 
For a perfect fish fry, the marinade is what is important. That gives the flavor to the final product.

We love ice creams in our home, well who doesn't! This recipe that I chanced upon is so ridiculously simple that it will blow your mind away! And it is so delicious that it is almost embarrassing to tell people how simple it is to make this when they gush about how tasty this homemade ice cream is!

 This method does not require any ice cream maker and there are no ice crystals formed. With only 3 ingredients, this is the easiest and yummiest recipe I have ever made and this is the creamiest ice cream I have ever had!
This recipe is found all over the internet and it is called No churn 2 ingredient ice cream. I have made over 20 variations with this recipe. This vanilla ice cream, is the base and to this, you can add many more flavors and make your own ice creams!
