Chocolate Custard Ice Cream

I had no idea of making this ice cream but when I make the Brooklyn Blackout Cake, I had about 1 cup of chocolate custard left over. So I decided to use it while making chocolate ice cream. And it turned out to be an awesome idea! 
This custard turned a simple chocolate ice cream into an exotic ice cream! Everybody loved this ice cream so much that now a days, whenever I make chocolate ice cream, I make the custard exclusively to add to it!

Hot Milk Sponge Cake

Plain, simple cakes are always special cakes. You can have it anytime of the day and you can serve it to anybody - old or young and everybody will absolutely love. Such is this hot milk sponge cake. So easy to make and it's such a soft and spongy cake. For sure, adding hot milk to the batter towards the end, makes this cake extra soft. So if you're looking for an old fashioned sponge then look no further than this!
You could top this with strawberries and cream or some chocolate sauce, it will taste divine. But we just love this plain!

Mudakathan Keerai Dosai

Few months back I suddenly suffered from severe knee pain. It was probably because of climbing all those stairs with the heavy school bags of my kids! Whatever the reason, I was struggling quite a lot with it and my maid suggested this recipe. I did some research on it and found out that this keerai has some anti inflammatory properties and it's quite rich in anti oxidants too. It is hailed as a natural joint pain reliever! In English it is called as Balloon Vine leaves.

So I decided to give it a go. And to my pleasant surprise, my knee pain has disappeared without any conventional medicine or treatment. From then on, I make it a point to include this keerai in our diet regularly.

This recipe is easy and simple to make and the best part is, I can give my kids too and they are quite excited to see the green dosa and eat it without a fuss!! There are 2 ways to make this dosa. You can add the cleaned leaves while grinding the idli dosa batter or you can make it like how I have done below. I find this method more simpler.

Kambu Chocolate Cake | Pearl Millet Chocolate Cake | Bajra Chocolate Cake

I first saw this recipe by Divya in Kitchen Galatta and I immediately knew I wanted to try this recipe and I noted down the ingredients. I had a packet of kambu and wanted to use it up and this cake seemed too good to pass by.

I love cooking with millets and I'm always trying out different recipes using various millets. But kambu is one of the millets that I've never tried before. This cake is tasty and delicious and good for health too. I have baked this 4 times now and it's always a lovely snack for my family.

Brooklyn Blackout Cake

I happened to chance upon this recipe that my aunt shared on facebook and I saved it to try out later as I like to try different chocolate cake recipes. But never did I imagine what a huge hit this cake will turn out to be! I have baked this cake four times now (within 30 days) and every time I baked for a different set of people and every one of them thoroughly loved this cake. This has become my 'go to' cake now.


Brooklyn Blackout Cake

This is a simple, rustic and rich chocolate cake, filled and frosted with chocolate custard/pudding and covered with the cake crumbs. For a history of how this cake and it's name came about, check this link.

Even though the chocolate cake by itself is enchanting, the star of this cake is the chocolate custard frosting. I was seriously tempted to just frost the cake with ganache, the first time I made this cake but I'm so glad I made the effort to make this custard to frost the cake as the frosting is so yum and compliments the cake so very well.

The chocolate custard tastes so good that I started adding it to ice creams I make and the ice creams have also been a huge hit! This humble custard takes the simple chocolate ice cream to a whole new level. I am so in love with this custard, that every time I make chocolate ice cream, I make this custard to add to it 😊

Baby Corn Poriyal | Baby Corn Stir Fry

My husband and me love baby corn but my kids are not so thrilled about it yet. Sometimes my daughter likes it and sometimes she doesn't so I make this one in a while. My most favorite thing to do with this baby corn is make a kurma or a simple masala
This time I thought of trying out this stir fry and it paired very well rice. It is easy to make and tastes great too!

Chocolate Cupcakes

Chocolate cupcakes tastes absolutely delicious! They are a favorite with everybody! I have already posted a chocolate cupcake recipe that uses oil. I wanted to try one recipe that uses butter and this cupcake turned out fabulously. I made some regular cupcakes and some mini cupcakes for our prayer group and it was very well received!!

Petal Frosting

Petal frosting is a beautiful way to frost a cake. I have always wanted to do this frosting but end up doing rosettes since it's simple and easy. 
This is the first time I tried this petal frosting so it's by no means, neat or perfect but I'm sure I will get better as I practice this design often!
I did this frosting on my Neapolitan Cake that I baked for my husband's birthday many months ago. The cake itself is a fantastic, delicious cake and this frosting complimented the cake beautifully!

Broccoli Pulao

Every time I see broccoli in the supermarket, I always remember the TV shows where they portray the broccoli as a distasteful horrible vegetable, and I somehow never picked it up! One day my anni bought this veggie for her daughters and I tasted it for the first time and ever since I have fallen in love with it! Now I don't understand why people don't like this veggie!!


Broccoli Pulao

Broccoli is green in color with a flower head and looks like a cauliflower. Always choose a broccoli that is completely green in color. Broccoli has a lot of health benefits and it's very good to include in our diet. It has high fiber content, with high levels of calcium, protein and anti oxidants.

I sometimes include broccoli in salads, noodles and make stir fry with it. This time, I wanted to try a pulao with it and it came out really well. We had it with palak paneer.

Double Chocolate Cake

On this 1st day of the new year, I wish all my lovely readers, a very Happy and Blessed New Year!! Lots to be celebrated in the month of December so lots of baking to be done and that makes me very happy!! 

I baked this cake first for my son's 1st birthday and then I made it again for his 4th birthday. This is a deep rich cake which we all loved. I adapted the chocolate cake recipe from here and the cake tasted absolutely wonderful. Every bite was filled with rich chocolate goodness. It's the next day today as write and I am enjoying another slice of this gorgeous beauty!

I tweaked the recipe a bit. I don't like using butter in chocolate cakes. Using oil makes the cake so moist and it stays moist. The general rule is, when you're replacing butter with oil, for every 1 cup of butter, you use 7/8th cup of oil. You can use butter if you prefer it. I also added coffee powder. I add coffee for all chocolate recipes. Just a bit of coffee takes the chocolate flavor to a whole new level. If you don't want to add, just leave it out. This recipe is definitely a keeper!
