Whole Wheat Fruit and Nut Cookies

My most favorite cookie is the fruit and nut cookies from unibic. I can eats packets and packets of that! These cookies are similar to those cookies and it's no doubt my favorite! Also these are very easy and quick to make with the goodness of whole wheat, oats and flax seeds. I always get annoyed with store bought cookies since they are so frugal in adding the fruits and nuts! But here I can add fruits and nuts to my hearts content! When I made these cookies my husband was fasting and I tell you it took a lot of self control to keep some for him!!



WHOLE WHEAT FRUIT AND NUT COOKIES

Ingredients
  • Wheat flour - 3/4 cup (I used aashirwaad)
  • Flax seeds powder - 1/4 cup
  • Oats - 1/2 cup (I used quaker)
  • Baking soda - 1 tsp
  • Oil - 1/4 cup (I used sunflower oil)
  • Sugar - 2/3 cup
  • Egg - 1
  • Vanilla extract - 1 tsp
  • Fruits & nuts - 1 cup
  • Chocolate chips - 1/2 cup
  • Salt - 1/4 tsp

Method.
Pre heat the oven to 180 degress C. Line a cake pan or cookie sheet and set aside.

1. Chop the fruits and nuts and set aside. Dry roast the oats for 3 minutes and set aside.

2. In a bowl, whisk the oil, sugar, eggs and vanilla.
3. Add the flour, flax seed powder, oats, baking soda and salt. Mix well. Mix it with spatula.

4. Add the fruits and nuts and chocolate chips. Mix everything together.

5. Place round scoops of this mixture on the cookie sheet and bake for 12- 15 minutes.

6. Cool in the cookie sheet for 2 minutes and then transfer to a cooling rack.

Notes
1. For an eggless version, mix 1 tbsp of flax seed powder in 3 tbsps of warm water. Set aside and use. Please note, I have not tried making the eggless version. This is only a suggestion. If you do try, let me know :)
2. If you don't have flax seed powder, skip that and use 3/4 cup of oats instead.
3. You can use any odourless, flavorless oil. 
4. I have used golden raisins, black raisins, figs, dates, almonds, cashew, walnuts, cherries. Use whatever you have at hand.
5. If you don't want to use chocolate chips, leave that and use 1.5 cups of fruits and nuts.
6. If your sugar crystals are large, measure 2/3rd cup and pulse it in a blender and then use.
7. You can store them in air tight containers.
8. You can replace some of the flour with cocoa powder and make a chocolate version too.
9. If you're not a fruit and nut person, leave that out and just use 1.5 cups of chocolate chips.

  17. Oh these look fantastic and I will be sure to make them! I don't eat much sugar so I might use a substitute but I love flaxseed and all things healthy. These will make a lovely treat.
