This chocolate cake is a soft moist and delicious cake. It's a huge 2.5 kg cake that I made for a college farewell party last year. This cake is perfect for a celebration or a birthday party.
Ingredients
- Flour - 1 cup
- Sugar - 1 cup
- Eggs - 4
- Vanilla - 2 tsp
- Baking powder - 1 tsp
- Baking soda - 1/2 tsp
- Salt - pinch
- Cocoa powder - 4 tnsp
- Oil - 1/4 cup
- Milk - 1/4 cup
- Coffee powder - 1 tsp
Ganache
- Dark chocolate - 400 gms
- Cream - 200 gms
Chocolate Whipped Cream - 2 cups
Sugar syrup
- Sugar - 1/2 cup
- Water - 1 cup
- Coffee powder - 1/2 tsp

Method
1. Pre heat the oven to 180 degrees C for 15 mins. Grease and line a 9 inch cake tin.
2. Take 4 eggs in a bowl and add vanilla to it. Beat the eggs till it's light and fluffy.
3. Add the sugar and continue to beat for 3 mins.
4. Add the milk and oil and beat for 30 seconds.
5. Place a sieve over the bowl and add the plain flour, cocoa powder, baking powder, baking soda, salt and coffee powder. Sieve 3 times.
6. Add the dry ingredients into the wet ingredients and gently fold to make a smooth batter.
7. Transfer the batter into the cake tin and bake in the pre heated oven for 35-40 mins or until a skewer comes out clean.
8. Bake 2 such 9 inch cakes.
9. Get the whipped cream and sugar syrup ready.
10. Place the first layer of cake on the cake board and soak with sugar syrup.
11. Spread a layer of whipped cream and then spread ganache over it.
12. Place the next layer of cake and soak it.
13. Spread some whipped cream and crumb coat the cake. Leave the cake in the fridge for 30 mins.
14. Then spread more whipped cream and frost/decorate the cake.
