This bread is made with whole wheat flour only and no added maida. I have added some whey water which gives the bread more structure as the whey water is rich in protein, I got this whey water from making paneer.
I have also added wheat gluten but this is optional, you need not add the wheat gluten, just the whey water will give this bread an excellent structure.
Ingredients
- Whole wheat flour - 4 cups
- Whey water - 1 cup
- Warm water - 1/2 cup
- Yeast - 2 tsp
- Jaggery -3 tbsp
- Oil - 2 tbsp
- Egg - 1
- Wheat gluten - 1 tbsp (optional)

Method
1. In a bowl take 1/2 cup of warm water and add the jaggery and yeast to it. Mix well and let it rest for 10 mins for the yeast to activate.
2. After 10 mins, add 1 egg to the yeast mixture and beat lightly.
3. Take the whole wheat flour in the mixing bowl, add salt and combine.
4. Add the yeast mixture to the flour.
5. Take 1 cup of whey water, slightly warm up the whey water and add it to the flour.
6. Close the mixer and let it run for 2 to 3 mins. As it's mixing, add the oil.
7. Then add the vital wheat gluten and let the mixer run for 10 mins (or knead the dough by hand for 12-15 mins)
8. After 5 mins, I added 1/2 cup extra flour. Then continue to knead the dough for 8 more mins.
9. After 12 mins of kneading, stop the mixer. The dough will be sticky, it's ok. Don't wait for the dough to become non sticky, then it will become very dry.
10. Transfer the dough to a work surface, add little extra dough and slight knead or roll the dough around to make it into a smooth round shape.
11. Grease a bowl with olive oil and place the dough inside it. Spread some more oil on the dough to prevent it from drying out.
12. Let the dough rest for 1 hour or until the dough doubles in size.
13. Once the dough doubles, punch it down and shape the dough, pinch the corners and sides.
14. Prepare a bread pan. I used a 9x5 inches loaf tin and I greased it with oil and spread some aata so the bread will come out easily.
15. Place the shaped dough inside the loaf tin, cover and let it rise for 30 mins in a warm place.
16. Take 1 egg and add some milk to it, whisk lightly and use this to give an egg wash for the bread.
17. When the dough has doubled, give an egg wash to the bread.
18. Pre heat the oven to 180 degrees C for 10 mins. While pre heating, place a small cup of water in the oven. This will create steam and give a good crust to your bread.
19. Bake the bread for 35-40 mins. Once done, remove the bread from the oven and spread some butter on it, remove the bread from the loaf tin and let it cool down completely before you cut it.
Notes
1. Using wheat gluten is purely optional. Even without adding the wheat gluten, this bread comes out really well because of the egg and whey water we have added.
2. I live in a hot place so I let my bread rise for only 1 hour for the 1st rise and 30 mins for the 2nd rise. If you live in a cold place or if it's winter, wait for 1.5 - 2 hours for the bread to rise the first time and 45 mins to 1 hour for the 2nd rise.
