How to make a gravity defying cake | Kit Kat M&M (Gems) Cake

I get excited when I have to bake cakes and I love to try different recipes and different techniques! I have been wanting to try a kit kat - Gems cake for quite sometime and I also wanted to try a gravity defying cake.... so for my son's birthday party, I made this cake. Both my kids love gems and they were so excited when they saw this cake! 
I made an eggless strawberry mousse cake and Hershey's perfectly perfect chocolate cake for the other parties that we had celebrating our son's 2nd birthday.
This cake is very easy to make and you can get creative and make any theme using this idea.


Anti - Gravity Cake


What you need
  • Frosted Cake - 1 (I used a 9 inch cake)
  • Thick straw or skewer - 1
  • Melted chocolate - 1/2 cup
  • Gems / M&M - 20 small packs or more (like the one in pic-really small gems pack)
  • Kit Kat - 11 packs (4 bar packs)

Method
1. Bake the cake and frost it with chocolate ganache. Check this post on how to make and frost with ganache.
2. When the ganache is still warm, break the kit kat bars into two pieces and stick it around the cake.



3. Secure it with a satin ribbon. The kit kats won't fall if it's stuck well to the ganache but still use the ribbon till you cut the cake.
4. Refrigerate the cake for 30 minutes. In the meantime, melt the chocolate and keep it ready.



5. Take a thick straw or skewer and insert it in the centre of the cake. Now place small amounts of melted chocolate on the gems/M&M and stick it to the straw.



6. Keep sticking more gems to give a flowing effect.
7. Spread the remaining gems on the cake.



8. Take one pack of gems/M&M and cut the corner of the pack. Apply some melted chocolate on the inside of the cut corner and stick it to the straw. Hold firmly until the pack sticks to the straw.

And that's it, your anti - gravity cake is ready to impress the kids!!

Notes
1. The chocolate should be of slightly thick consistency, only then the gems will stick to the straw. Otherwise it will keep sliding off.
2. If the chocolate is too runny, the gems will fall off while you try to stick to the straw. In that case, refrigerate the chocolate for 2-3 minutes and then try again.
3. You can make this kind of cake with fondant too.
4. The 11 packs of kit kats and 20 packs of small gems packet is for the 9 inch cake I used. You might need more or less depending on the cake size you use. And if you want to spread the gems throughout the cake, you will need a little more.
5. You can skip the gravity defying part and just make a kit kat gems cake too. The anti gravity part is just to get the kids more excited! My kids were super thrilled!! I had a tough time safe guarding the cake till the party!!
6. Add the gems/M&M, on the bend of the straw as well. That gives a more natural and flowing effect.

    1. Yes you can make this in advance. I made it a day in advance and kept it refrigerated till 15 mins before the party.

    1. Hi, I've never weighed my cakes!! Sorry! I just bake for my family so never felt the need to weigh my cakes. But this cake was baked in a 9 inch pan, sliced into two and frosted.

  27. Hello Maam, I melted the baking chocolate (70%cocoa) but the m&m didn't stick to straws. all were falling off. Could u tell me the baking chocolate should be what %

    1. It doesn't matter what chocolate you use, the consistency of the melted chocolate is important. It should not be watery but thick. Please read the entire post, I have mentioned clearly how to make the m&m's stick.
