Eggless Moist Chocolate Cake Recipe (egg free and dairy free)

I normally bake with eggs and recently I have been forced to bake eggless for others and loving it! I recently posted another eggless chocolate cake which was a huge hit. This time, I had to bake an eggless cake for my driver's daughter's birthday and I chose another recipe, this was a huge hit too! Just look at it!! It makes me want to dig in to it, all over again!

This is such a soft and moist cake and it literally melts in the mouth! I frosted the cake with ganache and whipped cream and every bite was absolutely heavenly. The guests who ate the cake, were absolutely delighted!

This is a very simple cake to make. The other eggless chocolate cake that I posted uses yogurt, but this one does not use yogurt. It's an egg free and dairy free cake! I love such cakes!! I adapted this recipe from here


Egg free Dairy free Chocolate Cake

EGG FREE DAIRY FREE CHOCOLATE CAKE
Preparation time 15 mins | Baking time 35 mins | Makes one 8" cake

Ingredients
  • Plain flour - 1 1/2 cups 
  • Fine sugar - 1 cup 
  • Cocoa - 4 tablespoons 
  • Baking Soda - 1 tsp
  • Salt - 1/2 tsp
  • Water - 1 cup 
  • Vegetable oil - 1/2 cup 
  • White vinegar - 2 tbsp (or lemon juice)
  • Vanilla extract - 1 tsp
  • Coffee - 1 tsp (optional)

Method

Makes one 8*8 cake.

1. Pre heat the oven to 180 degrees C. Grease and line a 8 by 8 inch pan.
2. Combine the flour, cocoa powder, baking soda and salt and sieve twice. Set aside. Add the coffee powder to the water and mix well. Set aside.



3. Beat the sugar and oil. Add the vinegar and vanilla extract and beat again.
4. Sift in the flour, baking soda, cocoa powder, salt into the wet ingredients (or just add the pre sifted dry ingredients) and fold gently along with the coffee mix.



6. Once everything is mixed well, pour into the pan and bake for 30 - 35 minutes.



7. Start checking at 30 minutes with a tooth pick or skewer. If it comes out clean then it's done.
8. Remove and cool in the pan for 10 minutes and then turn into a cooling rack.



9. Cool the cake completely and frost as desired.

Notes
1. Make sure all ingredients are at room temperature.
2. While mixing the dry ingredients to the wet ingredients, fold gently. Do not over mix.
3. If you're not planning on frosting the cake, add some walnuts. Gives a nice crunch to the cake.
4. Use same quantity lemon juice if you don't have vinegar.
5. Each oven is different, timings may differ. So start checking at 30 minutes.
6. Add more coffee powder if you like coffee.

    1. All my chocolate cakes are soft and moist because that's how we like it! If you have a favorite vanilla sponge cake recipe, try replacing 1/4 cup of flour with cocoa powder for a chocolate sponge cake.

  20. Hi again. Can I use this batter to make cupcakes. If yes what is the temp n time I wud need to bake them for?

    1. Technically you should be able to bake cupcakes too with this batter. Same temperature but reduced timing. If your tray has about 12 cupcakes, then start checking by 18 minutes.

    1. You can double the recipe but you will need a pan larger than 9 inch or build the sides of the pan using parchment paper. Also the baking time will change.

      I'm not sure how it will turn out since I've never tried it. But you can try replacing the cocoa powder with flour. If you try the switch, do let me know how it turns out!

    1. I have made this cake many times and felt the sweetness was just perfect. Why do you want to increase? If you increase the sugar too much then the cake might get sticky too. Try increasing by 2 tbsp first and then go upto 4 tbsp.
