I normally bake with eggs and recently I have been forced to bake eggless for others and loving it! I recently posted another eggless chocolate cake which was a huge hit. This time, I had to bake an eggless cake for my driver's daughter's birthday and I chose another recipe, this was a huge hit too! Just look at it!! It makes me want to dig in to it, all over again!
This is such a soft and moist cake and it literally melts in the mouth! I frosted the cake with ganache and whipped cream and every bite was absolutely heavenly. The guests who ate the cake, were absolutely delighted!
This is a very simple cake to make. The other eggless chocolate cake that I posted uses yogurt, but this one does not use yogurt. It's an egg free and dairy free cake! I love such cakes!! I adapted this recipe from here

EGG FREE DAIRY FREE CHOCOLATE CAKE
Preparation time 15 mins | Baking time 35 mins | Makes one 8" cake
Ingredients
- Plain flour - 1 1/2 cups
- Fine sugar - 1 cup
- Cocoa - 4 tablespoons
- Baking Soda - 1 tsp
- Salt - 1/2 tsp
- Water - 1 cup
- Vegetable oil - 1/2 cup
- White vinegar - 2 tbsp (or lemon juice)
- Vanilla extract - 1 tsp
- Coffee - 1 tsp (optional)
Method
Makes one 8*8 cake.
1. Pre heat the oven to 180 degrees C. Grease and line a 8 by 8 inch pan.
2. Combine the flour, cocoa powder, baking soda and salt and sieve twice. Set aside. Add the coffee powder to the water and mix well. Set aside.
3. Beat the sugar and oil. Add the vinegar and vanilla extract and beat again.
4. Sift in the flour, baking soda, cocoa powder, salt into the wet ingredients (or just add the pre sifted dry ingredients) and fold gently along with the coffee mix.
7. Start checking at 30 minutes with a tooth pick or skewer. If it comes out clean then it's done.
9. Cool the cake completely and frost as desired.
I frosted the cake with ganache and whipped cream. Here is a detailed post on how to make ganache and how to make whipped cream
Notes
1. Make sure all ingredients are at room temperature.
2. While mixing the dry ingredients to the wet ingredients, fold gently. Do not over mix.
3. If you're not planning on frosting the cake, add some walnuts. Gives a nice crunch to the cake.
4. Use same quantity lemon juice if you don't have vinegar.
5. Each oven is different, timings may differ. So start checking at 30 minutes.
6. Add more coffee powder if you like coffee.
6. Add more coffee powder if you like coffee.

ReplyDeletei do not have oven. How to bake a cake in microwave?
ReplyDeleteSorry dear, I have never baked a cake in microwave so no idea.
DeleteIs confectioner sugar same as powdered sugar
ReplyDeleteYes it's the same.
DeleteHi sorry again.. I have condense milk 200ml at home.. Can i use that instead of sugar
DeleteFollow the recipe exactly for best results, don't change it. Use sugar itself.
DeleteI tried this recepie.. Omg it came out so well... In love with this cake.. Thank you thank you :-)
ReplyDeleteGlad you liked it! It's one of my favorite cakes too!
DeleteHi i would like to know do you have any recepie for chocolate spong cake... Because my husband like cake to be spongy but not moist.. So really need your help..
ReplyDeleteAll my chocolate cakes are soft and moist because that's how we like it! If you have a favorite vanilla sponge cake recipe, try replacing 1/4 cup of flour with cocoa powder for a chocolate sponge cake.
DeleteHi again. Can I use this batter to make cupcakes. If yes what is the temp n time I wud need to bake them for?
ReplyDeleteTechnically you should be able to bake cupcakes too with this batter. Same temperature but reduced timing. If your tray has about 12 cupcakes, then start checking by 18 minutes.
DeleteCan I reduce all the items to half as I want to bake a small one?
ReplyDeleteYes you can!
DeleteHello once again Beulah, made this cake back to back for two days And ppl really really loved it.
ReplyDeleteThis is such a great recipe. It's for keeps For sure.
Thanks once again
I made it again yesterday too, have clicked new pictures, will update soon! I agree it is one of the best chocolate cake recipes! I also love it for the simplicity of it, I always have all the ingredients at hand! Thank you so much for coming back to write a feedback, I really appreciate it!
DeleteCan I replace oil with butter?
ReplyDeleteYes you can.
Deletehi..can u pls tel me how much measurements to increase if the above cake is to b made in 9 inch pan.TIA
ReplyDeleteYou can double the recipe but you will need a pan larger than 9 inch or build the sides of the pan using parchment paper. Also the baking time will change.
Deletethank u
DeleteHow much grams will be 11/2 cup flour?
ReplyDeleteTry google for an online conversion chart.

If you want to double a recipe then double everything except the baking temperature.
Deletecan u plz mention baking time
Deletehi
ReplyDeletei tried this recipe.it comeout superb.its soft and moist.can i use same recipe for vanilla sponge by skipping cocoa powder.
Hi Raghuma, thank you for the feedback! Glad you liked the cake.
DeleteI'm not sure how it will turn out since I've never tried it. But you can try replacing the cocoa powder with flour. If you try the switch, do let me know how it turns out!
Hi Beulah, its an amazing recipe.. you have used measuring cup of 250 ml or 200 ml?
ReplyDeleteHi Renu, thanks a lot! I have used a 200ml cup for this recipe.
DeleteI have made this cake sooooooo many times for bday celebrations. It's such a wonderful recipe n a keeper for sure. Thx a ton
ReplyDeleteThanks a lot Ashlesha :)
DeleteHi there. Once again I hv a query. Can I increase the qty of sugar by 1/4 cup
ReplyDeleteI have made this cake many times and felt the sweetness was just perfect. Why do you want to increase? If you increase the sugar too much then the cake might get sticky too. Try increasing by 2 tbsp first and then go upto 4 tbsp.
