Carrot Cheese Paratha

I normally make carrot paratha for my daughter's lunch box and one day I thought why not make it more healthy by adding some cheese to it. My daughter hates cheese and she never eats it so this was a nice way to include some cheese in her diet. She eats only one paratha and I use only a tbsp of cheese in it but still I am happy :)


Carrot Cheese Paratha



CARROT CHEESE PARATHA
Preparation time 20 mins | Cooking time 3 mins for each paratha| makes about 10

Ingredients
  • Wheat flour - 2 cups
  • Warm water - as required (I used around 1 cup)
  • Carrot - 3 medium
  • Cumin powder - 1/2 tsp
  • Coriander leaves - 2 tbsp, chopped
  • Grated cheese - 1/2 cup
  • Salt - as required
  • Oil/ghee - to toast the paratha

Method
1. Grate the carrot and add it to a non stick pan. Add about 1/2 tsp oil and saute until it becomes soft. 



2. Add the cumin powder, salt and coriander powder and mix well. Switch off and set this aside. Grate the cheese and set aside.
3. In a bowl or plate, take the wheat flour and add the required salt. Mix it lightly. 



4. Add the grated carrot and start adding warm water little by little and knead to form a soft pliable dough.
5. Make sure the dough is not too hard or too sticky. Cover it and set aside for 30 minutes.



6. Heat a tawa and pinch off a lemon sized ball of dough and keep a tbsp of grated cheese in the dough and seal it nicely.
7. Dust this in some flour and roll into shape.



8. Put it on the heated tawa and wait till one side gets cooked. Flip over and drizzle with oil/ghee and press on all sides and wait. The dough will puff up.



8. Flip it over again, make sure both sides are cooked well and remove.

Serve with curd or sauce or pickle.

Notes
1. You need not add the carrot while kneading the dough, you can add it with the cheese and do a stuffing of both. I prefer this way since I don't like the filling oozing out while rolling the dough.
2. Add some chopped green chillies, red chilli powder or garam masala powder while cooking the carrots. It will be very flavorful.
3. You need not cook the carrots separately, you can add it to the dough and it will get cooked while you cook the paratha.
4. You can do the same with beetroot as well.
