Kothu Chapathi with Eggs

This is a common street food and mostly it is made with parotta. Almost all street corners have a vendor making kothu parotta. But you can make the same with chapathi as well, makes a perfect snack time dish. I mostly make this dish with left over chapthi's and it's a huge hit in the family. I like this recipe too because...well, I like any recipe that takes care of the left overs!!


Kothu Chapathi


KOTHU CHAPATHI
Preparation time 10 mins | Cooking time 15 mins | Serves 2-3

Ingredients
  • Chapathi - 4 or 5
  • Eggs - 2 (or) scrambled paneer *check notes
  • Onion - 3
  • Tomato - 2
  • Ginger garlic paste - 2 tsp
  • Garam masala powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Cumin powder - 1 tsp
  •  Coriander leaves - 2 tbsp, chopped
  • Salt - to taste
To Temper
  • Oil - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Curry leaves - few
  • Green chilli - 2

Method
1. Tear the chapthi into small pieces and set aside. Chop the onions and tomatoes.
2. In a pan, add oil. Once the oil heats up, add the mustard seeds, urad dal, curry leaves and green chillie.



3. When the mustard seeds splutter, add the chopped onions. Saute until the onions turn translucent.
4. Add the ginger garlic paste and saute until the raw smell leaves.



5. Now add the chopped tomatoes and salt. Cook for 3 minutes in medium flame. 
6. Add the turmeric powder, garam masala powder and cumin powder. Mix well and cook for a couple more minutes. Add 2 tbsp of water if needed.



7. Push the masala to one side of the pan and break open the eggs. Scramble the eggs in high heat and mix together with the masala.
8. Check for salt, if needed add more. Add the torn chapathi pieces. Mix together with the egg masala.



9. Sprinkle some water and make sure it all comes together. It should not be too dry.
10. Add the chopped coriander leaves and switch off.

Notes
1. You can do the same with parathas and poori.
2. For a vegetarian version, you can use scramble paneer instead of eggs.
3. You can add 3 eggs too for 4 or 5 chapathi.
