Here is another healthy breakfast or dinner recipe that you can try. Millets are excellent for health especially for diabetics. Check out the other millet recipes on the blog. I have tried kuthiraivali vegetable pulao, thinnai pongal and ragi semiya and all have been excellent and well received at home. This time I made kuthiraivali upma for my millet loving husband and he thoroughly enjoyed it! I enjoyed it too, it gives you a great sense of satisfaction when you make something healthy for your family and I loved this upma.

In Hindi it's called Jhangora / Odalu in Telugu / Oodalu in Kannada.
KUTHIRAIVALI UPMA
Preparation time 10 mins | Cooking time 15 mins | Serves 2
Ingredients
Method
1. Wash and soak the kuthiraivali for 30 mins.
2. In a pan, add oil. Once the oil heats up add the mustard seeds, urad dal, channa dal, green chilli and curry leaves.
3. When the mustard seeds splutter, add the chopped onions and chopped ginger. Add salt and saute until the onions become translucent.
4. Add water. Mix well. Add the chopped coriander, check for salt. If needed add more salt.
5. Once the water starts boiling, add the soaked kuthiraivali and mix well.
6. Close the lid and allow to cook completely and all water is gone.
7. Once done, mix well and serve hot.
Serve hot with sambar and chutney.
Notes
1. This should be served hot otherwise it will become dry.
2. You can add 1/4 tsp turmeric powder too.
3. Have this upma with a curry or gravy or a nice sambar and chutney.
4. You can add some vegetables too.
5. You can use upto 3 cups of water too, especially if your going to eat little later, it's better to add 3 cups of water as millets have a tendency to dry up pretty quickly. If your serving immediately, 2.5 cups of water is enough.
Until next time,
