Mango Phirni

Phirni is an Indian sweet dish make with rice and milk and it tastes absolutely delicious. I like to flavor the phirni with seasonal fruits and that takes the dessert to a whole new level! My most favorite phirni and the favorite of everybody at home, is this mango phirni made with ripe mangoes. So here's the recipe for this yummy dessert!


Mango Phirni


MANGO PHIRNI
Preparation time 15 mins | Cooking time 20 mins | Serves 3-4

Ingredients
  • Mango pulp - 3/4 to 1 cup
  • Milk - 1/2 litre
  • Rice flour - 4 tbsp
  • Condensed milk - 1/2 cup
  • Almonds - 3 tbsp, chopped
  • Saffron - 10 strands
  • Salt - 1/4 tsp

Method
1. Heat the milk in a heavy bottomed pan. When the milk is warm, take 1/4 cup of milk in a small bowl and dissolve the rice flour in it.
2. Take another 1/4 cup of the warm milk and soak the saffron strands in it.



3. Continue to heat the remaining milk in medium flame. Keep stirring the milk.
4. Add the dissolved rice flour in the milk, stirring continuously so that no lumps are formed. Reduce the flame to low.



5. Keep cooking this mixture, for about 10 mins, till the milk thickens. Keep stirring.
6. When the milk is thickened, add the condensed milk and salt, stir well. 



7. After about 5 minutes of stirring, add the almond flakes and mix well.
8. Add the saffron and stir. Switch off the flame and let the mixture cool (you can even refrigerate it)



9. Then add the mango pulp and mix well. 
10. Fill up your dessert bowls and top with some more almond flakes and refrigerate until serving.

Notes
1. If your mangoes are not sweet then add more condensed milk or sugar.
2. You can blanch the almonds, remove the skin and then add too. If you're adding un blanched almonds, toast it in the microwave for 30 seconds and then add.
3. If you don't have rice flour, use raw rice. Soak for 30 minutes, drain the water and grind it to a coarse paste and then dilute with milk.
4. While serving you can add some more chopped mangoes to the bottom of your serving dish and then pour the phirni over it.
5. If you don't have condensed milk, replace with sugar.
6. Add the rice flour paste slowly stirring often so that no lumps are formed.
