Coffee Cake

By nature I am not a coffee person, I never drink coffee and I have never liked coffee! The best part is no one in my family likes coffee, so I'm never forced to make coffee at home!! I buy coffee powder only to add in my chocolate cakes and brownies!!
But I've used coffee to make coffee ice cream and now this coffee cake and both times were super delicious! I baked this cake for my brother's birthday since my brother and his family loves coffee and they loved the flavor of this cake.
This is one of the softest cakes I have had! Soft and moist and so full of coffee flavor! My nephew even commented that the cake was like a pillow! So soft! I made some minor adjustments from the original recipe since it did not come perfectly the first time I baked it. This time, it was just perfect!!

Coffee Cake

COFFEE CAKE
Preparation time 15 mins | Baking time 35 mins | Makes one 6 inch cake
Adapted from here

Ingredients
  • Unsalted butter - 170 gms (about 3/4 cup)
  • White or brown sugar - 3/4 cup
  • All purpose flour (maida) - 1 cup
  • Baking powder - 1 tsp
  • Eggs - 2
  • Instant coffee - 1 or 2 tbsp (I used 1 tbsp nescafe coffee powder)
  • Milk - 1/4 cup
  • Vanilla - 1 tsp
  • Salt - 1/4 tsp
  • Chocolate chips - 1/4 cup
Coffee Cake

Method
Pre heat the oven to 180 C/350 F. Grease and line a 6 inch cake pan.

1. In a large bowl, add the softened butter and sugar and beat until it's light and fluffy.

2. Add the eggs and vanilla and beat again for a minutes. Make sure you scrape down the sides and bottom of your bowl and then beat.

3. Add the milk and beat again.
4. Add the coffee powder and beat again until it's well mixed.

5. Sift in the flour, baking powder and salt. Fold gently.
6. Pour into the prepared pan and sprinkle the chocolate chips on top of the batter.

7. bake in the pre heated oven for 35 minutes or until a skewer comes out clean.

Coffee Cake

Notes
1. Coat the chocolate chips in flour and then add  it on top of the batter.
2. Even if you coat the chocolate chips with flour, there are chances for the chips to sink down to the bottom of the cake since the batter is very light.
3. You can add more coffee granules too but I added only 1 tbsp and it was just perfect!
4. I used granulated white sugar but powdered it, to help dissolve easily.

Until next time,

    1. You can try coffee buttercream or coffee whipped cream or even espresso ganache will go well.

    1. Hi Payal, thank you! This is a very soft and moist cake so I don't know how an egg substitute will work. But you can try the regular substitutes like yogurt or flax meal.

  9. Hello ma'am.
Can we substitute butter with oil? If so whats the measurement?

    1. Yes you can, use the same amount but this is already a soft cake, the oil will make it more soft.
