Chocolate Kiwi Cake | Kiwi Cake using Kiwi Crush | Chocolate Cake using Curd/Yogurt | Kiwi Cake




Ingredients
  • All purpose flour (maida) - 105 gms 
  • Sugar - 200 gms 
  • Cocoa powder - 45 gms 
  • Egg - 1 
  • Curd / yogurt - 1/2 cup (120 ml) 
  • Oil - 1/4 cup 
  • Hot water - 1/4 cup (60 ml) 
  • Coffee powder - 1/2 tsp 
  • Baking soda - 1 tsp 
  • Baking powder - 1/2 tsp 
  • Salt - 1/2 tsp 
  • Vanilla - 1 tsp 

Sugar syrup 
  • Sugar - 1/4 cup 
  • Water - 1/2 cup 

Frosting 
  • Whipping cream - 250 ml 
  • Vanilla - 1 tsp 
  • Icing sugar - 2 tbsp 
  • Kiwi crush - 2 tbsp

Method
1. Take two 7 inches cake tin and grease it with oil or butter and line it with a butter paper or parchment paper so that the cake comes out easily without sticking to the pan.
2. Pre heat the oven to 180 degrees C for 20 mins.
3. Take 1/4 cup of water and add the coffee granules and mix it well. Heat this in the microwave till it's warm.
4. Then take the egg in a bowl and add vanilla to it.
5. Then add curd. Add the refined oil and beat this well.
6. Then add the sugar and beat it in.
7. Then place a sieve over the bowl and add maida, cocoa powder, baking powder, baking soda and salt. Sieve this into the bowl.
8. Combine the wet and the dry ingredients, as you start mixing, add the coffee and mix till you get a smooth batter. Do not over mix the batter.
9. Transfer the batter into the cake tins and tap it on the counter to remove air bubbles. And bake in the pre heated oven for 20 mins.
10. Put a skewer into the cake, if it comes out clean, then it's done otherwise bake for a little longer.
11. Let the cake cool in the tin for 15 mins then remove it from the tin and cool completely.

Sugar syrup
1. Take the sugar and water in a bowl and heat it up, mix it till the sugar dissolves.
2. Set aside till it cools completely.

Frosting.
1. Take the whipping cream, add vanilla and icing sugar to it and beat till stiff peaks.
2. Take the first cake and place it on the serving platter or cake board.
3. Soak this cake layer with the sugar syrup.
4. Then spread a layer of whipped cream.
5. Add the kiwi crush and spread it.
6. Then place the next layer of cake, soak this layer and add whipped cream and spread evenly.
7. Frost the entire cake with whipped cream.
8. Add some crush on top of the crush and spread it well and decorate the cake as you wish.

Notes
1. Make sure the curd is thick in consistency and it should not be sour.
2. I have baked this cake in 2 cake tins, you can bake it in one 7 inch cake tin and cut it into two while frosting.
3. If you bake this in a single cake tin then the baking time will be slightly more.
4. Instead of using kiwi crush, you can also use fresh kiwis.
