Neapolitan Cupcakes | How to make Neapolitan Cupcakes- In this post, we will see how to make a tasty neapolitan cupcakes. These cupcakes are so soft, moist and pretty looking. Whether you like chocolate flavor, vanilla flavor or strawberry flavor, you will enjoy these cupcakes. For a brief history on the Neapolitan cake (which I googled), this cake was originally a frozen dessert - the Neapolitan ice cream. It's presumed to have it's origin in Naples, Italy and it initially resembled the Italian flag and had many different flavors. Finally the 3 most favorite flavors - chocolate, vanilla and strawberry became the standard. 


Ingredients 
  • Butter - 125 gms 
  • Sugar - 100 gms + 1 tbsp 
  • Eggs - 2 
  • Milk - 3 tbsp 
  • Maida - 100 gms 
  • Cocoa powder - 1 tbsp 
  • Milk - 1 tbsp 
  • Strawberry crush - 1 tbsp 
  • Milk - 1 tbsp 
  • Baking powder - 1 tsp
  • Salt - 1/4 tsp 
  • Vanilla - 1 tsp

Frosting
  • Whipping cream - 1/2 cups 
  • Vanilla - 1/2 tsp 
  • Icing sugar - 1/2 tbsp
  • Ganache - 1/2 tbsp 
  • Strawberry crush - 1/2 tbsp

Method
1. Pre heat the oven to180 degrees C for 15 mins.
2. Take the butter in a bowl and add the sugar. Beat the butter and sugar till it's light and fluffy.
3. Add the eggs and vanilla and beat for 1 min.
4. Stop the beater in between and scrape the bottom and sides of the bowl so that everything gets mixed well.
5. Then add the milk and beat again.
6. Place a sieve over the bowl and add the maida, baking powder and salt.
7. Mix everything together and sieve it into the bowl.
8. Combine the wet and the dry ingredients, don't overmix the batter. Mix till you get a smooth batter.
9. Divide the batter equally into 3 bowls.
10. To the 1st bowl, add a tbsp of cocoa powder and milk. Mix it till it's smooth and lump free.
9. To the 2nd bowl, add 1 tbsp strawberry crush (check notes) and add 1 tbsp milk and mix it's smooth.
10. Leave the 3rd bowl plain, this will be the vanilla layer. 
11. Line the muffin tray with paper liners.
12. Add 1 tbsp of chocolate batter into each muffin liner and tap well. I used a small ice cream scoop to measure the batter.
13. Next add 1 tbsp of strawberry batter over the chocolate batter and spread it with a spoon.
14. Then add 1 tbsp of vanilla batter over the strawberry layer and spread evenly with spoon.
15. Tap the pan gently on the counter to remove air bubbles.
16. Bake in the pre heated oven for 16-18 mins or until a skewer comes out clean. 


For the frosting
1. Take the whipping cream in a bowl, add icing sugar and vanilla and beat the cream. 
2. Beat for cream for 3-4 mins till it forms stiff peaks.
3. Divide the cream equally into 3 bowls.
4. To the 1st bowl, add 1/2 tbsp of ganache or 1/2 tbsp of cocoa powder. Mix well. This will be our chocolate frosting.
5. To the 2nd bowl, add 1/2 tbsp of strawberry crush or strawberry essence. Mix well.
6. Leave the 3rd bowl plain.

To Frost the cupcakes
1. Transfer the whipped creams into 3 piping bags.
2. Now in another piping bag, insert a nozzle and then put all the 3 piping bags into the bag with the nozzle so that you will get all three colors while piping.

Notes
1. If you have fresh strawberries then add 1 tbsp of strawberry puree to the strawberry batter and strawberry whipped cream. Or you can use strawberry compote, strawberry jam. Or if you don't have anything, then just add strawberry essence and pink color.
