Eggless Rasamalai Cake | How to make an easy Rasamalai Cake - In this post, we will see how to make a tasty, delicious and juicy eggless rasamalai cake. This is one of my favorite fusion desserts. If you love rasamalai, then you will for sure, love this cake!



Ingredients 
  • Maida - 1.5 cups 
  • Powdered Sugar - 1 cup 
  • Curd - 1/2 cup 
  • Rasamalai essence - 1/2 tsp 
  • Oil - 1/3 cup 
  • Milk - 1/2 cup 
  • Baking powder - 1 tsp 
  • Baking soda - 1/2 tsp 
  • Salt -1/4 tsp 
  • Saffron - 1/2 tsp 
  • Cardamom powder - 1/2 tsp 
  • Pistachios -2 tbsp 
  • Yellow food color - 2 drops

Frosting 
  • Whipping cream - 1and 1/4 cup 
  • Rasamalai essence - 1/4 tsp 
  • Icing/powdered sugar - 2 tbsp 
  • Rasamalai - as needed 
Method
1. Pre heat the oven for 15 mins at 180 degrees C.
2. Take warm milk in a bowl and add saffron strands to the milk and soak for 5-10 mins.
3. Then, take the maida, baking powder, baking soda and salt in a sieve.
4. Sieve the dry ingredients 3 times.
5. Add the curd to the saffron soaked milk. Then add the oil and add the rasamalai essence. Mix well.
6. Add the powdered sugar and mix again.
7. Add the dry ingredients in 2 batches and combine with the wet ingredients. 
8. Add the cardamom powder and mix gently. Don't overmix the batter.
9. Add chopped pistachios and mix in with the batter.
10. Take 2 greased and lined 7 inches cake tin.
11. Divide the batter equally into the 2 cake tins. Tap the tins on the counter to remove air bubbles.
12. Bake in the pre heated oven for 20 - 25 mins or until a skewer comes out clean.
13. Remove the cake from the tins after it cools for 15 mins.
14. For the frosting - take the cold whipping cream in a bowl and add the icing sugar. Add the rasamalai essence. Add the yellow food color.
15. Beat the cream for 2-3 mins. Stop the beater and add 2 tbsp of rasamalai milk.
16. Continue to beat the cream till stiff peaks are formed.
17. To assemble the cake - Spread some cream on the cake board. Place the 1st layer of cake on the cake board and soak the cake with rasamalai milk.
18. Spread some whipped cream on the cake. Add some chopped rasamalai. You can add pistachios as well.
19. Place the next layer of cake and soak it too.
20 Spread more cream and frost the cake completely.
21. Decorate the cake as you wish with more rasamalai, pistachios and rose petals.



STEP BY STEP PICTURES

12. Add the dry ingredients in 2 batches and combine with the wet ingredients.


13. Add cardamom powder.




14. Add chopped pistachios and mix in with the batter.



15. Take 2 greased and lined 7 inches cake tin.


16. Divide the batter equally into both tins.


17. Tap the cake tins on the counter to remove air bubbles.


18. Bake in the pre heated oven for 20 - 25 mins or until a skewer comes out clean.



19. Remove the cake from the tins after it cools for 15 mins.




20. For the frosting - take the cold whipping cream in a bowl and add the icing sugar.


21. Add the rasamalai essence.


22. Add the yellow food color.


23. Beat the cream for 2-3 mins.


24. Stop the beater and add 2 tbsp of rasamalai milk.



25. Continue to beat the cream till stiff peaks are formed.


26. Spread some cream on the cake board.


27. Place the 1st layer of cake on the cake board.


28. Soak the cake with some rasamalai milk.


29. Spread some whipped cream on the cake and spread evenly.




30. Spread some chopped rasamalai.



31. Spread little more cream on the chopped rasamalai.


32. Place the next layer of cake and soak with rasamalai milk.



33. Spread more whipped cream and frost the cake completely.






34. Decorate the cake as you wish, I made a simple design.




35. Add more pistachios and dried rose petals.




36. A beautiful tasty and delicious rasamalai cake is done.


Notes
1. If you don't have rasamalai essence, you can use vanilla essence.
2. Instead of baking in 2 tins, you can bake in 1 tin and then cut the cake while frosting.
