Karupati Cake | கருப்பட்டி கேக் | Palm Jaggery Cake

Karupati Cake | கருப்பட்டி கேக் | Palm Jaggery Cake - Karupati or palm jaggery is a healthy option for sugar, which is rich in iron. This is a healthy cake that can be made for kids. It's a soft, moist and flavorful cake.



Ingredients
  • Karupati - 200 gms
  • Water - 1/2 cup
  • Whole wheat flour (aata) - 1 cup (120 gms)
  • Baking soda - 1/4 tsp
  • Baking powder - 1 tsp
  • Cardamom powder - 1/4 tsp
  • Eggs - 2
  • Melted butter - 1/4 cup
  • Nuts - 1/2 cup
  • Salt - a pinch

Method
1. Pre heat the oven to 180 degrees C. Grease and line a 6 inches cake tin.
2. Break the palm jaggery into smaller pieces, add water and heat it up till it dissolves completely.
3. In a bowl, take the whole wheat flour, add baking soda, baking powder, salt and cardamom powder. Mix well and sieve three times.
4. In another bowl, take the eggs, add vanilla and beat till it's light and fluffy.
5. Add the melted butter and beat again. Strain the palm jaggery and add it along with eggs and butter. Beat it well.
6. Add the dry ingredients and mix gently till it forms a smooth batter.
7. Add the chopped walnuts and mix again.
8. Transfer the batter into the cake tin. Tap the tin on the counter to remove any air bubbles.
9. Bake in the pre heated oven for 20-25 mins or until a skewer comes out clean.
10. Remove the cake from the oven and let it cool completely before cutting into it.
