Mango White Chocolate Cheesecake

Summer is upon us and with it comes the king of all fruits, the mangoes! We love mango cheesecakes in our house and I've made many varieties of mango cheesecakes. This is one of the easiest and simplest version of mango cheesecake.



Ingredients 

  • Biscuits - 50 gms 
  • Melted butter - 15gms 

Cheesecake layer 
  • Mango- 140 gms 
  • White chocolate - 125 gms 
  • Cream cheese - 150 gms 
  • Cream - 45 gms 
  • Sugar - 1 to 3 tbsp (depending on the sweetness of mango. I added 3 tbsp) 
  • Lemon juice - 1/2 tsp 

Topping 
  • Mango - 2 slices 
  • Sugar - 1 tbsp

Method
1. I'm using a small disposable box to make this cheesecake. You can make 2 such boxes with this recipe. If you don't have such boxes, then use a 4 inch cake tin to make this cheesecake.
2. Take the biscuits in a small mixee jar and powder it.
3. Add the melted butter and beat again. Mix well.
4. Transfer this into the boxes equally and press firmly. Keep in refrigerator till we finish next step.
5. In a medium sized mixee jar, add the mangoes, cream cheese, cream, sugar and lemon juice. Beat well till smooth.
6. Then add the melted white chocolate and beat again.
7. Transfer this equally into both the boxes. Tap well and refrigerate for 1 hour.
8. Take 2 small slices of mangoes in a mixee jar and add a tbsp of sugar to it and blend well.
9. Add this on top of the cheesecake layer and spread evenly.
10. Keep refrigerated for another 1 hour and then garnish and serve.

Notes
1. The white chocolate helps in setting the cheesecake, it does not cause a difference in the taste of the cheesecake.
