Mango Cheesecake Box | Cheesecake without Agar agar or Gelatin

This is an easy to make cheesecake recipe and we don't have to use any setting agents like gelatin or agar agar. I made this recipe using only a blender, it's a quick and easy summer recipe! If you like cheesecakes, then try out this recipe, just make sure you use ripe mangoes for extra taste! I have used 4 inch box to set this cheesecake, this recipe will make 2 such boxes.

Homemade Cream Cheese Recipe

Necessity is the mother of invention!! Although I live in a large metropolitan city, I live in the suburbs and I have never seen a tub of cream cheese in my neighborhood. So, whenever I needed to use cream cheese in a cheesecake recipe, I have always used cottage cheese (paneer) and it always workes very well for me. So I never went about hunting for cream cheese.

But this time, I wanted to bake some cheesecake brownies and I wasn't sure if paneer will work so I made the effort to make the cream cheese at home and I tell you, it is so easy and simple to use that this is what I'm going to make the next time I need cream cheese!

Actually the method to make cream cheese at home needs some culture but this is an alternative and it works well. You can use this cream cheese for your cheesecakes. There are plenty of cream cheese recipes online, I referred many many recipes and this is what worked for me.

Cream Cheese Brownies | Cheesecake Brownies

I wanted to bake some red velvet cheesecake brownies for Valentine's Day but then decided against it and went for plain cream cheese brownies. Both recipes are pretty similar except for the red color added in red velvet brownies. 
These brownies turned out to be super delicious, so fudgy just the way I like them! The cream cheese layer paired very well with the brownie layer.
I made cream cheese at home for this recipe and it was so good and worked so well for this recipe. 

We are not big on celebrating Valentine's Day. My husband chants the same thing each year 'Everyday is Valentine's Day' and there is no need to have a special day to celebrate love! And I don't mind since I believe the same too. But I wanted to make something for my blog and for my readers so chose these lovely brownies!

Chocolate Peanut Butter Cheesecake - No Bake and Eggless

Ever since I saw this recipe in smitten kitchen, I have been desperate to make my own version of chocolate peanut butter cheesecake. I was so desperate that I even started dreaming about it! But I don't make cheesecakes for my family because I will end up eating the whole thing myself! So I waited patiently for an opportunity to make this cake! Then finally I made this to take it to my cousin's house!

I always make the non bake type of cheesecake and use cottage cheese instead of cream cheese and we simply love it! 
This cheesecake was no different. I loved every bite of it! Soft, silky, smooth, rich and delicious! I made this cake some time back and now looking at these pictures, makes me crave for just one more slice!

Oreo Cheesecake (No bake and eggless)

I made this cake ages ago for my nieces, I think all my oreo based recipes in this blog have been made for them! This is an easy cheesecake recipe and it tastes absolutely delicious! I have already posted a chocolate chilli cheesecake, chocolate cheesecake, mango cheesecake and strawberry cheesecake (all eggless and no bake recipes). I love all my cheesecakes, it is awesome. The only thing is, it is very rich and so I don't make it often.
As with my other cheesecake recipes, I have used cottage cheese for this recipe, you can use cream cheese too.

Eggless No Bake Strawberry Cheesecake

We love cheesecakes in our house, I made this strawberry version to take it to my in laws house and we all enjoyed this flavor. Tastes awesome! Of course, I have used cottage cheese to make this cheesecake, like all my other cheesecakes but you can make it with the traditional cream cheese too.

Eggless No Bake Chocolate Chilli Cheesecake | Easy No Bake Recipes

So it was a special birthday of a special person in our family and I wanted to make a special cake! I always go for chocolate based cakes when it's time to celebrate and this time, it was no different! 

As I was pondering on which cake to bake, I came across this chocolate chilli cheesecake in the cadbury website. I have heard of and seen chocolate chilli cake/cupcakes/cheesecake recipes before but I never thought I would be making them since I never preferred cheesecakes. But of course, all that changed ever since I made the eggless mango cheesecake! I totally fell in love with cheesecakes ever since I had that mango cheesecake and I have been looking for an opportunity to make it again, in a different flavor!

Eggless No Bake Mango Cheese Cake | Easy No Bake Recipes

I can't believe I am writing a post on mango cheesecake! Cheesecakes have been the last on my to-do list simply because I don't like them! I have had some store bought cheesecakes before and I didn't quite like the taste and I never wanted to make them. But seeing the craze for cheesecakes, I decided to do justice to my blog and make one just for the sake of the blog!

And even then, I was making the cheesecake for my driver's son's birthday. Was planning on making a nice cheesecake, click some pictures and send the cake over to their house! But alas, when the cake was almost done, my driver tells me that everybody in his family is down with fever. I can't give a chilled cake for a family that is struggling with fever so I was forced to cut and eat this cake.

Chocolate Cheesecake - a Guest Post by Anu | Easy No Bake Recipes

Today I am happy to have Anu from Anu's Kitchendelights! I love Anu's blog, the recipes that she posts are so awesome! So much of variety, she covers every area! Of course I love to go through her baked goodies, I have book marked many to try them out!


I'm really glad she agreed to do a guest post for me and I was eagerly waiting to see what she will come up with and I was so excited when she sent me a cheesecake and that too a chocolate one! For all the cakes I bake, I have never made a cheesecake! That's because I tasted a baked cheesecake somewhere and I did not like it! At all! And after that experience I have never dared to bake a cheesecake. 
After seeing Anu's recipe, I think I have to change my opinion and maybe try one!!

I am really happy to do a guest post for one of my fellow blogger and friend, Beulah of Full Scoops. She is one of the supporter of my space and passes her comments in her best manner and  keeps inspiring. When she asked me to do a guest post i was really surprised and happy and so readily accepted. I asked her suggestion for the type of dish, and when she gave the choice of either baking or dessert, it was easy for me to go into cheesecakes. As she have a wonderful collection of desserts and cheesecake recipes I had to select something different that do justice to her blog. Her baking recipes are drooling and they have a professional touch that has inspired me.  




When I decided to go in for chocolate cheese cake, I should admit that I was keeping my fingers crossed thinking about how it would turn out.  Though I have already tried out cheese cakes, they were in very small short glasses just enough for 3 of us and this is the first time I'm making a cheese cake in bit more volume using a spring from pan. Fortunately it turned out well in-spite of hot and humid temperature here. I kept my recipe simple with my own proportions and adjustments.
They were creamy and chocolaty and perfect to foil in your mouth in no time. Luckily lighting was perfect here and i enjoyed taking my clicks which went up to 100 giving the food writer and food photographer in me great creative delights.  




Chocolate Cheese cake Recipe - Ingredients:
Preparation time: 8 hrs (including setting) | Cooking time: 30 mins | Recipe cuisine: World | Category: Dessert
                                                                                                                                For the Base:

  • Crushed Biscuits - 1 cup (digestive or crackers)
  • Butter - 4 tbsp
  • Coco powder - 2 tbsp (omit if using chocolate biscuits)
  • Powdered sugar - 2 tbsp
  • For the Cheese cake:
  • Cream Cheese - 1 cup
  • Heavy cream   - 1 cup
  • Sugar -    1 cup ( powdered)
  • Semi sweet/ Dark Chocolate - 1 cup + 1 tbsp butter
  • Agar Agar - 3 tbsp
  • Water - 1/2 cup

For Topping:

  • Chocolate shavings - 2-3 tbsp
  • Cherries - few to decorate
  • Whipped/ heavy cream - 1 scoop




Method:
To prepare base:
1. Crush the biscuits to a fine powder in a mixer. In a bowl mix the powdered biscuits, coco powder, sugar and melted butter and mix with your finger tips until it resembles bread crumbs and butter is well incorporated.



2. Press this mixture over the base of a 8’ inch spring form pan or any tin with detachable base.



3. Refrigerate the base for about 1 hr. Meanwhile you can prepare the cheese filling.

To prepare Cheesecake:
1. Take the agar agar and soak it in 1/2 cup hot water for 10 mins.
2. In a bowl beat the cream cheese, heavy cream and powdered sugar until smooth and creamy.



3. Melt the chocolate with butter using a double boiler method. Allow it to cool slightly and slowly stir in to the cheese mixture and mix well.



4. Place the china grass along with the water and allow it to melt stirring all the while on low flame. (Alternatively you can also microwave along with the water for 2 mins on med high). Once it melts completely pour it over the chocolate cheese mixture and stir well without any lumps.



5. Immediately pour the chocolate cheese mixture over the prepared biscuit crust. 
6. Cover and allow it to set in the refrigerator for 4 hrs or overnight.

Take it out and decorate with chocolate shavings and top it up with cherries and whipped cream.
Dig into these yummy treat.



Notes
1. Allow the agar agar to melt completely and add while it is still hot itself. You can also strain and add to avoid lumps.
2. If desired you can add another layer to this cheese cake with chocolate ganache or just simply melt milk chocolate and pour over it.
 
3. If you prefer using gelatin, use 1 tbsp of gelatin mixed in 4 tbsp of water. Mix it and let it sit for 5 minutes. Then heat it in a microwave for 30 seconds. Allow to cool completely and then use.
