Vendakkai Poriyal Recipe / Lady's Finger (Okra / Bhindi )Stir fry Recipe

Ladies finger / vendakkai is a healthy vegetable . It is high in fibre and low in calories and has a truck load of health benefits. This is a favorite in our home and gets done many times a week, in different forms. This recipe is the simplest way of making okra. many don't make this vegetable sInce they feel it gets very sticky, but if you cook right then there is no stickiness.

LADY'S FINGER PORIYAL
Preparation time 5 mins | Cooking time 15 mins | Serves 2

Ingredients
  • Ladies Finger - 1/4 kg
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Oil - 2 tsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Curry leaves - few
  • Green Chilli - 1 chopped
  • Salt - to taste

Method
1. Wash and cut the ladies finger. Cut the head and tail part of the vegetable and chop the okra into small pieces.
2. In a pan, add oil. Once the oil heats up, add the mustard seeds, ural dal, curry leaves and green chiili.



3. After the mustard seeds splutter, add the ladies finger. Keep stirring. 
4. Once the ladies finger starts shrinking, add the turmeric powder, coriander powder and stir.



5. Do not add water, if you add water, the okra will get sticky. Keep stirring with the lid open.
6. When the okra is half cooked add salt.
7. Keep stirring slowly in low flame until the stickiness is gone and the ladies finger has slightly turned color, turn off the flame.

Goes well with rice and dal.

Notes
1. Do not add water. Water makes the okra more sticky. 
2. If it does get sticky, add a tbsp of curd or besan powder.
3. You can add some kadala maavu too instead of curd to avoid stickiness.
4. If you keep stirring with the lid open, this does not need any additional ingredient to prevent the stickiness.
5. Onions can be added.
