These baby potatoes are so cute, I love to cook with them! This is one of the simplest dishes to make and when ever I am out of ideas or out of veggies, potatoes always comes to the rescue. This goes well with rice.
Ingredients
Method
1. Pressure cook the baby potatoes for 2-3 whistles until they are cooked but not too mushy.
2. Peel the potatoes and prick holes in it with a fork.
3. In a bowl, take 1 tbsp of oil and add all the masalas and salt. Add the baby potatoes to the masala and mix well.
4. Make sure the masala is coated on all sides.
5. Let it rest for about 15-20 minutes.
6. In a non stick pan, add the remaining 1 tbsp oil. Once the oil heats up, add the mustard seeds and urad dal and curry leaves.
7. After the mustard seeds crackle, add the coated baby potatoes and mix well.
8. Keep stirring and cook until the baby potatoes are cooked well and is well browned and roasted.
Serve hot with any rice variety.

1. Add any masalas of your choice to coat the baby potatoes.
