Canned Tuna Stirfry
You remember my husband Arun, he wrote a guest post for me ages ago! He decided to cook again one day and he agreed to make it into a guest post for me! Last time he wrote potato fry and this time it's Tuna! I should say I was quite apprehensive to try tinned foods - in my defense I have never had tinned food and had no clue about it so I was not game to experiment but he has made me a believer!!

This recipe's genesis is again from my cooking experiments in my London bachelor days. All guys staying in one flat - each day one guy has to cook.. among the lot who stayed, I was the second best cook, my flatmates said. This dish is my specialty :)

Soya 65 | Meal Maker Recipes | Easy Soya Recipes
Soya nuggets is one of the richest food that is available, full of protein, iron, calcium among others. This is the vegetarian equivalent of meat. My husband loves soya nuggets and prefers eating this more.
I had a packet of soya and decided to make this fried version for an evening snack. This tastes awesome, crispy and yum!

Easy Nutella Muffins
This is one of the easiest muffin recipes you will come across! So simple to make and so delicious too. This is more like a brownie than a muffin. Nutella, which is a favorite among kids, makes this muffin - oh so yum!!
You can bake this with bare minimal ingredients which will be available in your kitchen. This is a great idea for an evening snack or even for kids snack box.

Masala Omelette
This is one of the simplest recipes ever! When ever we need a quick side dish or when there are no veggies at home, this omelette always comes to the rescue! You can have this for breakfast also with bread, makes a delicious, flavorful, spicy breakfast!
Ingredients
Method
1. Break open the eggs in a bowl. Add the turmeric powder, coriander powder, cumin powder, garam masala powder, pepper powder and salt. Mix together.
2. In a pan, add a tsp oil. When the oil heats up, add the chopped onions and garlic. Saute till the onions turn translucent.
3. Add the chopped curry leaves and coriander leaves and mix with the onion.
4. Add this onion to the egg mixture and mix everything well.
5. In the same pan, add a drop of drop and spread well. Pour the egg mixture and spread lightly.
6. Cover and cook the egg. When one side is cooked, flip over and cook the other side as well.
7. Remove from flame and enjoy!
Notes
1. When you cover and cook, both sides get cooked quickly. But this is optional. You can cook without covering too.
2. You can make it more spicy by adding chopped chillies.
3. You can add some cooked vegetables to the mix too.

You must know by now that I am very interested in instant recipes, I go hunting for these recipes and I love my collection of instant microwave recipes. They are easy to make, quick and best of all, they are all single servings so I don't feel bad after eating it!
This is one such recipe. I have been wanting to bake a batch of brownie cookies but have been putting it off since I don't want to be tempted with it and end up eating quite a few! And this recipe, which makes just 1 cookie, was perfect to satisfy my cravings for a brownie cookie! These recipes are awesome!

- All purpose flour / maida - 2 tbsp
- Sugar - 2 tbsp
- Cocoa - 2 tsp
- Melted butter - 1 tbsp
- Milk - 1 tsp
- Baking powder - 1/8 tsp
- Salt - 1/8 tsp
- Vanilla - 1/4 tsp
- Coffee powder - 1/4 tsp
- Chocolate chips - to decorate (optional)

Method
1. In a bowl, add the all purpose flour, sugar, cocoa powder, baking powder, coffee and salt. Mix it all together.
2. Now add the melted butter and milk, fold until combined.
4. Microwave on high at 900 watts for 1 minute and 10 seconds. If it's still not cooked, microwave for a few more seconds.
5. You can microwave in short bursts too to prevent the cookie from burning.
Notes
1. Each microwave is different, set the time according to the power of your microwave.
2. Powder the sugar and then use otherwise you will taste sugar crystals in the cookie if the sugar is not dissolved well.

Eggless Whole Wheat Carrot Muffins
I have been on the look out for some healthy moist and delicious carrot muffins and these little muffins fit the bill perfectly. These are soft and moist and healthy, that you can bake for your family and friends and enjoy a guilt free snack.
I made these for my family to snack on as we went on a long drive to another city and these fabulous muffins made the journey pleasant and enjoyable!

1 Minute Eggless Chocolate Chip Cookie
You know, I love to bake, in fact I love baking more than cooking but if there is one thing that I don't like to bake, it's cookies! Simply because I need to stand by the oven all the time checking on the cookies and keep changing trays! I have a small oven and I can bake only about 4-5 cookies at a time and hence baking cookies is my least favorite!

Ragi Semiya Upma | Ragi Vermicelli Upma | Finger Millet Noodles
I'm so dejected as I write this post. My favorite camera is broken! I've been using a simple point and shoot camera for all my pictures and it has served me well for 200 plus posts but now it's gone! My son has thrown my camera multiple times and nothing ever happened and I dropped it accidentally - just once - and it's broken! On the up side, my birthday gift from my husband is still pending so maybe I'll get a bigger and better camera as my gift!! Fingers crossed!
Today's recipe the Ragi Semiya Upma is a healthy breakfast dish. This is a wonderful alternative to the regular semiya upma. Actually my husband picked up this ragi sevai while we were grocery shopping and I tried it out and it came out very good. I've made this a few times and without the added masalas it tastes very bland. This is the way we liked it. So here's the recipe.
Also try the thinai sevai, tastes too good!

Instant Microwave Fruit Cake (no eggs & no butter)
INSTANT FRUIT CAKE! If you have followed my blog, you know how much I love the instant recipes. So when I came across this one, it's only natural that I tried it immediately!
I love Christmas, I love everything about Christmas but most of all I love baking the Christmas fruit cake! The other day I was travelling in my brother's car and I was listening to some carols, it's ever green Christmas in their car! They play Christmas carols all through the year! Those songs put me in the mood for something 'Christmassy' and I tried this recipe and what an awesome recipe it is!

Chicken Pakoda / Pakora / Chicken Fritters
My husband has been asking me to make chicken pakodas about a 100 times! Now if he had asked for some brownies or muffins his wish would have been granted immediately!! But anyways one day I got down to making it for him!
This is an easy recipe to make and tastes so good! The trick is to make it crispy. It's one of the most favorite appetizer / starter and you will find it in almost all restaurants.

Instant Microwave Carrot Cake ( no eggs, no butter )
I love the flavor of carrot cake, next to chocolate cake, carrot cake is my most favorite cake! My favorite carrot cake recipe is a huge cake and when I came across this small cake, I was elated! It takes only 2 minutes to put together and I had all the ingredients readily available in my kitchen.

Vegetable Aval Upma / Vegetable Poha Upma
Aval or flattened rice is a great breakfast option or it can be had as a snack too. The beauty of this dish is that, it can be prepared in very less time and it is very flavorful and tasty! I love any aval dish as it gives an opportunity to break away from the mundane idli and dosa!

Eggless Mango Muffins
Since my daughter started school, I'm upto my nose with things to do! My responsibilities seems to have doubled and baking and blogging has taken a backseat! Amidst all this, my maid quietly told my mum that her 3rd daughter's birthday is coming up. I normally bake cakes for her children's birthdays and I did not want to disappoint the little girl but since I did not have time to bake a cake, I made these mango muffins.
This is such a simple recipe, so easy and quick to put together. I finished this in 35 mins after bringing my daughter home from school. It tastes absolutely delish, so soft and moist! My maid said her daughter's have never had cupcakes/muffins before and they thoroughly enjoyed this muffin!

Dal Fry
This is one of the simplest and easiest dishes that you can prepare and it tastes absolutely yum! This is such a comfort food for all Indians, can't imagine life without dal fry or dal tadka. When I'm too bored to cooked or not well, it's always dal fry! This is such a flavorful dish and healthy too.
