Eggs are one of my favorites, simply because it's so easy to prepare and whenever there's nothing in the fridge, these simple eggs make a delicious side dish! This is one of the simplest and easiest egg recipes that I make but I should say, this is easily one of the favorites. It tastes absolutely yum!
EGG ROAST
Preparation time 10 mins | Cooking time 15 mins | Serves 2
Ingredients
Method
1. Boil the eggs. To get the perfectly boiled eggs, check this post on how to make perfect hard boiled eggs.
2. In a skillet/pan, add oil. Once the oil heats up, add the cumin seeds and wait for it to splutter. Add the curry leaves and green chillies.
3. Add the chopped onions and saute till the onions turn translucent.
4. Add the ginger garlic paste and saute till the raw smell leaves.
5. Add the chopped tomatoes. Cook in medium flame until the tomatoes are mushy.
6. Slit the boiled eggs lightly and add it to the gravy.
7. Mix the eggs well along with the gravy and cook for a couple of minutes.
8. Add chopped coriander leaves and switch off.
Notes
1. This preparation is very spicy with pepper powder and green chillies. Adjust the spice level to your preference.
2. You can add 3 eggs for this gravy, I added 2 since it was just for my husband and me.
