Since my daughter started school, I'm upto my nose with things to do! My responsibilities seems to have doubled and baking and blogging has taken a backseat! Amidst all this, my maid quietly told my mum that her 3rd daughter's birthday is coming up. I normally bake cakes for her children's birthdays and I did not want to disappoint the little girl but since I did not have time to bake a cake, I made these mango muffins.
This is such a simple recipe, so easy and quick to put together. I finished this in 35 mins after bringing my daughter home from school. It tastes absolutely delish, so soft and moist! My maid said her daughter's have never had cupcakes/muffins before and they thoroughly enjoyed this muffin!
EGGFREE MANGO MUFFINS
Preparation time 8 mins | Baking time 25 mins | Makes 9 muffins

Method
Makes 9 muffins
Preheat the oven to 180 degrees C.
1. In a bowl, add the mango pulp, sugar and milk and mix well using an electric mixer or a hand whisk.
2. Add oil and vanilla extract and mix again.
3. Sift in the flour, baking powder and salt. Or pre sift and add in batches. Fold gently.
4. Add the chocolate chips and mix well.
5. Pour into muffin moulds and sprinkle some chocolate chips on top.
6. Bake at 180 degrees C for 20-25 minutes until a skewer comes out clean.
7. Let the muffins cool in the pan for 5 minutes and then remove and let it cool completely.
Notes.
1. You can add nuts instead of chocolate chips.
2. Use any odourless, flavorless oil. I used refined sunflower oil.
3. If you prefer butter instead of oil, add 8 tbsps of butter.
