Pepper Chicken Masala

This is one of the tastiest chicken recipes that I have had! The spices that go into preparing this dish, makes it so delicious! Pepper chicken is a favorite in our house and we make this often especially when someone has a cold! The pepper makes this an extremely spicy and flavorful dish! We had this with a simple rasam and yet it was one of the most satisfying meals that I've ever had! Do try it out, you won't regret it.


Pepper Chicken Masala


PEPPER CHICKEN MASALA
Preparation time 2 hrs (including marination) | Cooking time 30 mins | Serves 2-3

Ingredients
  • Chicken - 1 kg
  • Cinnamon - 2
  • Cloves - 4
  • Curry leaves - 1 sprig
  • Tomato - 2 small (pureed)
  • Pepper corns - 1 tbsp (crushed)
  • Oil - 2 tbsp
  • Coriander leaves - 3 tbsp chopped
For the masala
  • Onion - 1 cup (chopped)
  • Ginger - 2 inch piece
  • Garlic - 6 cloves
  • Red chilli powder - 2 tsp
  • Coriander powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Pepper corns - 1 tbsp
  • Salt - to taste

Method
1. Combine all the ingredients listed under 'for the masala' in a blender and blend to a smooth paste.



2. Marinate the washed and cleaned chicken with this paste. Coat the chicken well and let it rest for a couple of hours.



3. Pressure cook the marinated chicken with half a cup of water for 2 whistles. Simmer after the 1st whistle. Or you can cook along with the masala in a pan.



4. Heat oil in a pan, add the cinnamon, clove and curry leaves. Add the crushed pepper corns and saute for a few seconds.
5. Add the tomato puree and saute for a couple of minutes.



6. Add the pressure cooked chicken along with the water. If you did not pressure cook the chicken then add the marinated chicken at this stage, add required water, close the lid and let the chicken cook for about 10 minutes until well cooked. 



7. Let the chicken cook until the gravy is thick. Once done, mix well and check for salt. 



8. Allow the chicken to cook for 5 more minutes until the chicken is well coated with the masala.
9. Add chopped coriander leaves and switch off.

Goes well with rice or roti/paratha.

Notes
1. Use whole black pepper corns for good flavor if not you can use pepper powder.
2. This dish is extremely spicy, do reduce the pepper and red chilli level if you prefer mild spice.
3. Add water according to the consistency of the gravy you desire.
4. I forgot to add curry leaves so added it late.
