Mom's Chicken Curry

My mom makes a fabulous chicken curry, it is one of the best curries around and we all enjoy eating it. One of the most common Saturday recipes in our house is the peas pulao and this chicken curry. There are plenty of recipes in this blog which are her recipes, the other famous one is the spicy prawn masala and crab fry.
This chicken is an extremely spicy dish, adjust the spice level to your preference.


Chicken Curry


CHICKEN CURRY
Preparation time 15 mins | Cooking time 25 mins | Serves - 3

Ingredients
  • Chicken - 1/2 kg
  • Onions - 3 
  • Tomato - 4
  • Pepper powder - 1 tsp
  • Coriander powder - 1 tsp
  • Aachi kuzambu masala - 1 or 2 tbsp
  • Red chilli powder - 1 tsp
  • Cumin powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Mint leaves - a handful
  • Ginger garlic paste - 1 tbsp
  • Coconut paste - 2 tbsp
  • Water - 1/2 to 1 cup
  • Coriander leaves - 2 tbsp, chopped
  • Salt - to taste
To Temper
  • Oil - 2 tbsp
  • Cinnamon stick - 1
  • Cardamom - 3
  • Cloves - 5
  • Star anise - 1
  • Bay leaf - 1
Chicken Curry


Method
1. Wash and clean the chicken well. Blend the onion and tomato to a paste. 
2. In a pressure cooker/pan, heat oil. Once the oil heats up, add the cinnamon stick, cardamom, cloves, star anise and bay leaf.


3. When a nice aroma emanates, after about a minute, add the onion and tomato paste and some salt.
4. Saute for about 3 minutes and add the masalas, turmeric powder, pepper powder, coriander powder and aachi masala.


5. Mix well and saute for 5-8 minutes until the oil starts separating. 
6. Add the mint leaves, mix in and add the ginger garlic paste.


7. Saute until the raw smell of ginger and garlic leaves. Add the chicken and mix well.
8. Saute the chicken with the masala for about 5 minutes. Add the red chilli powder and mix in.
9. Add the coconut paste and mix well. Let it cook for a couple of minutes.


10. Add the cumin powder and mix well. Add about 1/2-1 cup of water depending on the consistency of the gravy you require.
11. Add the chopped coriander leaves and check for salt.


12. Pressure cook for 3 whistles or close the pan and cook for about 10 minutes until the chicken cooks completely.
13. Open the cooker after the pressure releases and give a little boil until the gravy reaches the consistency you prefer.

We enjoyed with corn and peas pulao.

Notes
1. Adjust the spice level to your preference.
2. You can add some chopped potatoes too.
