Mushroom and Egg Rice | Easy Lunch Box Recipes

This rice has become one of the most favorite rice recipes for us! We love mushrooms and we love eggs and this makes an awesome combination This rice is so flavorful and delicious and you can have it with minimal accompaniments, a simple raita and chips is more than enough.

You can make this rice on a lazy day and this is amazing to pack for lunch boxes too. When I was making the mushroom and egg bhurji, I had an idea to make a rice out of it and it turned out fabulously! This is just like the masala egg rice but with the addition of mushrooms! This is also similar to a mushroom and egg fried rice but without the 'fancy' additions that goes with making a Chinese style fried rice.


Mushroom Egg Rice


MUSHROOM EGG RICE
Preparation time 20 mins | Cooking time 15 mins | Serves 2

Ingredients
  • Mushroom - 1 pack
  • Eggs - 2
  • Cooked rice - 1 cup
  • Onions - 1 large, chopped
  • Green chilli - 2
  • Ginger garlic paste - 2 tsp
  • Tomato - 1 large, chopped
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Coriander leaves - 2 tbsp, chopped
  • Salt - to taste
To Temper
  • Oil - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Curry leaves - 1 sprig

Mushroom Egg Rice


Method
1. Cook the rice and spread it on a plate to cool or use left over rice. Clean and chop the mushrooms and set aside. 
2. In a pan, add the oil. Once the oil heats up, add the cumin seeds and curry leaves.


3. When the cumin seeds splutter, add the chopped onions, green chilli and some salt. Saute until the onions become translucent.
4. Add the ginger garlic paste and saute until the raw smell leaves.

5. Add the tomatoes, mix well and cook covered for a few minutes until the tomatoes are well cooked.
6. Add the turmeric powder, coriander powder and garam masala powder, mix well and cook for a couple more minutes.


7. Add the chopped mushrooms, mix in with the masala. Close the lid and allow the mushroom to cook for 5 minutes. No need to add water, the mushroom will leave out some water which is enough to cook it.
8. Now, push the mushroom to one side of the pan and break open the eggs. Scramble at high flame.



9. Mix the mushrooms along with the eggs. Add more salt if needed.
10. Now add the rice and mix in with the mushrooms and eggs. Let it cook for a couple of minutes until it's all well mixed.
11. Add the chopped coriander leaves and switch off.

Notes
1. You can make it more spicy if you prefer.
