Baked Egg Toast

My city has been hit by heavy rains the past month leading to floods and massive destruction. Schools have been closed for nearly a month. There's been so much of loss and so many of my friend's houses have been submerged in water. It's really heart wrenching to see so many people who have lost everything that they had. Our heartfelt thoughts and prayers to all those affected in this rain.

Coming to today's recipe, this is a different way to serve eggs to your family. Baked egg toast is as delicious as any other forms of eggs that we have for breakfast. This is a healthy wholesome food that kids will love!
This recipe can be adjusted to your liking. I like my eggs to be fully cooked while my husband likes half cooked, runny eggs so if you're like me, then bake these for a little longer otherwise go by the timings mentioned.


Baked Egg Toast



BAKED EGG TOAST
Preparation time 10 mins | Baking time 15 mins | Serves 2

Ingredients
  • Eggs - 2
  • Sandwich bread slice - 2
  • Pepper powder - 1/2 tsp
  • Salt - 1/4 tsp
  • Butter - 1 tbsp
  • Cheddar/parmesan cheese - 50 gms
  • Allspice - 1 tsp

Method
1. Pre heat the oven to 180 C. Line and grease a baking tray.
2. With a spoon, press down the centre of the bread slices, making sure you don't tear the bread slice.


3. Spread the butter on the bread slice.
4. Mix both salt and pepper together and sprinkle half of it on the bread slices.


5. Transfer the bread to the baking tray and break open the eggs onto the depressions/ impressions made on the bread.
6. Sprinkle the remaining salt and pepper over the eggs, on the bread slices.


7. Sprinkle the cheese along the edges of the bread slice.
8. Bake in the pre heated oven for 13-15 minutes. If you want the eggs fully cooked, bake for  longer.
9. Once done, remove from the oven and let cool for a minute and then enjoy!

Notes
1. Use sandwich bread slices. They make good dents when pressed down with the spoon.
2. If you prefer your eggs fully cooked, bake for longer.
3. Use any spice of your choice.
4. You can break open the eggs in a bowl and add some chopped veggies and then add it to the bread.
5. If you're depressions/impressions are not enough, the eggs will run out. So make sure you make the impressions deep. Using a sandwich bread is best.
