Snake Gourd Stir Fry | Pudalangai Poriyal

How to make Snake Gourd Stir Fry - In this recipe, we will see how to make a simple and easy Snake Gourd stir fry. This is a South Indian specialty and goes very well with rice based dishes like Rasam rice.



Ingredients
  • Snake gourd - 4, medium (chopped)
  • Onion - 1
  • Red chilli powder - 1/2 tsp
  • Coconut - 3 tbsp
  • Oil - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Urad dal - 1/4 tsp
  • Curry leaves - sprig
  • Hing - pinch
  • Red chillies - 6

Method
1. In a kadai, heat the oil and add the mustard seeds, cumin seeds, urad dal, curry leaves, hing and red chillies. Saute for a few minutes.
2. Then add the chopped onion, add little salt and cook till onions are golden brown.
3. Then add the chopped snake gourd. Mix in with the onion.
4. Cover and cook for 6-7 mins. I don't add extra water to cook my veggies, if you need you can sprinkle some water.
5. After 7 mins, open and add some red chilli powder and salt to taste.
6. Then add the shredded coconut and mix well and switch off.

Notes
1. Adjust red chillies as per your taste.
2. You can add some coriander powder as well.
