Chocolate Truffle Cake | Truffle Cake Recipe | How to make a Rich Chocolate Truffle Cake - In this recipe, we will see how to make an exotic, soft, moist, delicious chocolate truffle cake. This cake tastes better than a store bought truffle cake. 



Ingredients 
  • Maida - 1 cup 
  • Baking powder - 1 tsp 
  • Baking soda - 1/4 tsp 
  • Cocoa powder - 4 tbsp 
  • Sugar - 12 tbsp (120 gms) 
  • Eggs - 2 
  • Oil - 1/2 cup 
  • Milk - 4 tbsp 
  • Vinegar - 1/2 tsp 
  • Salt - 1/4 tsp 
  • Vanilla - 1 tsp 

Ganache 
  • Dark Chocolate - 500 gms 
  • Cream - 300 gms 
  • Butter - 1 tbsp 

Glaze 
  • Ganache - 1/4 cup 
  • Oil - 1 tbsp 
  • Milk - 1 tbsp 

Sugar syrup 
  • Water - 1/2 cup 
  • Sugar - 1/4 cup

Method
1. Grease and line a 6 inches cake tin with butter paper and pre heat the oven to 180 degrees C for 15 mins.
2. In a bowl, take 2 eggs and add vanilla to it. Beat the eggs till it's light and fluffy.
3. Then add sugar and beat well. Next add oil and beat well.
4. Place a sieve over the bowl and add the maida, cocoa powder, baking powder, baking soda, salt. Sieve it into the bowl.
5. Combine the wet and the dry ingredients. Don't overmix the batter.
6. Finally add the vinegar and mix in.
7. Transfer the batter into the prepared cake tin. Tap the tin on the counter to remove any air bubbles, bake in the pre heated oven for 20 25 mins or until a skewer comes out clean.
8. Let the cake cool completely and then remove the cake from the tin.

Ganache
1. To make the ganache, take the chocolate, cream and butter in a microwave safe bowl and heat for 1-2 mins.
2. Mix well and let it cool for 30 mins. Leave it in the fridge for sometime, till it comes to the right consistency to frost.

Frosting
1. Cut the cake into 3 layers. Remove the domed portion of the cake.
2. Place the 1st layer of cake on the cake board and soak this layer.
3. Then add a dollop of ganache and spread evenly.
4. I added some chocolate chips on top of the ganache.
5. Repeat the same with the remaining layers of cake.
6. Do a crumb coat with the ganache and leave the cake in the fridge for 30 mins.
7. After 30 mins, add more ganache and frost the entire cake.

Glaze
1. Take 1/4 cup of ganache. Add a tbsp of oil and milk and mix well.
2. Heat in the microwave for 10 seconds and mix till it becomes a smooth mixture.
3. Wait for the glaze to cool completely and pour it over the cake.
4. Leave the cake in the fridge to set.
5. Decorate the cake as you wish, I made some chocolate decorations to place on the cake.

Notes
1. It is better to make the ganache ahead of time so it sets perfectly. If you make it at the time of frosting, then leave the ganache in the fridge for sometime to set.
