Multigrain Health Mix Cake | Health Mix Cake Recipe | Healthy Cake for Kids - In this recipe, we will see how to make a healthy multigrain health mix cake. 


Ingredients 
  • Health Mix Powder | Sathumavu Powder- 1 cup 
  • Baking powder - 1 tsp 
  • Eggs - 3 
  • Butter - 80 gms 
  • Jaggery - 130 gms (about 1 cup) 
  • Cardamom powder - 1/4 tsp 
  • Salt - a pinch 
  • Walnuts - 1/4 cup

Method
1. Grease and line a 6 or 7 inches cake tin with oil or butter.
2. Pre heat the oven to 180 degrees C for15 mins.
3. Take the butter in a bowl and beat for 1 min.
4. Then add the jaggery and beat the butter and jaggery till it's light and fluffy.
5. Then add the eggs, one at a time and beat well.
6. Now to add the dry ingredients, place a sieve over the bowl and add the multigrain health mix powder, baking powder, cardamom powder, salt.
7. Mix well and sieve into the bowl. Combine the wet and dry ingredients, don't overmix the batter.
8. Add the chopped walnuts and mix in.
9. Transfer the batter into the prepared cake tin, tap the tin on the counter to remove air bubbles.
10. Bake in the pre heated oven for 20-25 mins or until a skewer comes out clean.
11. Let the cake cool completely and then remove it from the tin.

Notes
1. I used homemade health mix powder, you can use store bought powder too.
2. As we are used a health mix powder, be very gentle while mixing the batter. Don't over mix the batter otherwise your cake will become hard.
3. If the batter is very thick, you can add a tbsp of milk to loosen it.
4. If your kids won't like the added walnuts, then add 1/4 cup of chocolate chips instead.
