Neapolitan Cake | Easy Neapolitan Cake Recipe | How to make a Neapolitan Cake | Chocolate Vanilla Strawberry Cake - In this recipe, we will see how to make a tasty and beautiful Neapolitan Cake. 

 For a brief history on the Neapolitan cake (which I googled), this cake was originally a frozen dessert - the Neapolitan ice cream. It's presumed to have it's origin in Naples, Italy and it initially resembled the Italian flag and had many different flavors. Finally the 3 most favorite flavors - chocolate, vanilla and strawberry became the standard. 



I have always wanted to bake a Neapolitan cake, simply because it's a pretty looking cake! But then the recipes I looked at always had 3 different recipes for the 3 layers (strawberry, chocolate and vanilla). You can opt for such a recipe too but I prefer this kind of a recipe which uses one batter divided 3 ways. For me, this is much easier. 

Ingredients 
  • Maida - 1 cup 
  • Eggs - 4 
  • Vanilla - 2 tsp 
  • Baking soda - 1/2 tsp 
  • Baking powder - 1 tsp 
  • Sugar - 1 cup 
  • Oil - 1/4 cup 
  • Milk - 3 tbsp 
  • Cocoa powder - 1 tbsp 
  • Strawberry crush - 1 tbsp 

Frosting
  • Whipping cream - 2 cups 
  • Vanilla - 1 tsp 
  • Icing sugar - 1/4 cup 
  • Ganache - 2 tbsp 
  • Strawberry crush - 2 tbsp 

To soak the cake 
  • Milk/Water - 1 cup 
  • Sugar - 1/2 cup

Method
1. Take three 6 inches cake tins. I used disposable cake tins. Grease the cake tins well.
2. Pre heat the oven to180 degrees C for 15 mins.
3. Take 4 eggs in a bowl and add vanilla to it. Beat the eggs till it's light and fluffy.
4. Then add the sugar and beat again. Add oil and beat again.
5. Place a sieve over the bowl and add the maida, baking powder, baking soda and salt. Mix together and sieve into the bowl.
6. Combine the wet and the dry ingredients, don't overmix the batter.
7. Divide the batter equally into 3 bowls.
8. To the 1st bowl, add a tbsp of cocoa powder and milk. Mix it till it's smooth and lump free.
9. To the 2nd bowl, add 1 tbsp strawberry crush (check notes) and add 1 tbsp milk and mix it's smooth.
10. Leave the 3rd bowl plain, this will be the vanilla layer. Add 1 tbsp milk alone to this batter and mix well.
11. Transfer the batter into the prepared cake tins. Tap the cake tins on the counter to remove any air bubbles and then bake in the pre heated oven for 18-20 mins or until a skewer comes out clean.
12. Let the cakes cool completely and then remove from the pan.
13. Scrape off the top layer of the cakes.

For the frosting
1. Take the whipping cream in a bowl, add icing sugar and vanilla and beat the cream. 
2. Beat for cream for 3-4 mins tillit forms stiff peaks.
3. Divide the cream equally into 3 bowls.
4. To the 1st bowl, add 1 tbsp of ganache or 1 tbsp of cocoa powder. Mix well. This will be our chocolate frosting.
5. To the 2nd bowl, add a tbsp of strawberry crush or strawberry essence. Mix well.
6. Leave the 3rd bowl plain.

Assembling the cake
1. Place the chocolate layer cake on the cake board, soak the cake with sugar syrup (I used milk+sugar).
2. Place some chocolate whipped cream on the cake and spread evenly. Add some ganache and spread again.
3. Place the strawberry cake layer next and soak the cake with milk+suagr+strawberry crush.
4. Place a dollop of strawberry whipped cream and spread evenly.
5. Then add a tbsp of strawberry crush and spread evenly.
6. Then place the vanilla cake layer. Soak this layer with sugar syrup or milk+sugar.
7. Now do a crumb coat. Add a layer of respective whipped cream against the cake layers and do a crumb coat. Refrigerate the cake for 30 mins.
8. After 30 mins, bring the cake from the fridge and decorate the cake as you wish.

Notes
1. If you have fresh strawberries then add 2 tbsp of strawberry puree to the strawberry batter and strawberry whipped cream. Or you can use strawberry compote, strawberry jam. Or if you don't have anything, then just add strawberry essence and pink color.
