Strawberry Cake with Fresh Strawberries | How to make a Simple Strawberry Cake - In this recipe, we will see how to make a simple, easy and a beautiful looking Strawberry Cake with fresh strawberries. 


Ingredients 
  • Eggs - 2 
  • Vanilla - 2 tsp 
  • Sugar - 1/2 cup 
  • APF/maida - 1/2 cup 
  • Baking powder - 1/4 tsp 
  • Baking soda - a pinch 
  • Salt - a pinch 
  • Oil - 1.5 tbsp 
  • Milk - 1.5 tbsp 
  • Strawberries - 8 to 10 
  • Sugar - 1 tbsp 
  • Water - 1 tbsp 
  • Cornflour - 1/2 tsp 
  • Whipping cream - 1.5 cups 
  • Vanilla - 1 tsp 
  • Icing sugar - 1 tbsp 
  • Strawberries - to decorate

Method
1. Take a 5 or 6 inches cake tin and grease the tin with oil or butter so that the cake comes out easily without sticking to the tin.
2. Then pre heat the oven to 180 degrees C for 15 mins.
3. To make the cake batter, take the eggs in a bowl and add vanilla to it. Beat the eggs till it's light and fluffy.
4. Then add the powdered sugar and beat again for another minute.
5. Then add the oil and milk and beat for 30 seconds.
6. Then place a sieve over the bowl and add the maida, baking powder, a pinch of baking soda and a pinch of salt. Sieve this into the bowl.
7. Combine the wet and the dry ingredients to make a smooth batter. Don't overmix the batter.
8. Transfer the batter into the cake tin and tap the cake tin on the counter to remove air bubbles.
9. Bake in the pre heated oven for 18-20 mins or until a skewer comes out clean.
10. Once done, remove the cake from the oven and let the cake cool completely, then remove from the tin.

Strawberry Compote
1. As the cake is cooling down, let's make the strawberry compote.
2. Take about 8-10 strawberries, wash well and chop roughly.
3. Add the strawberries in a saucepan, to this add sugar and water.
4. Keep the flame at medium, cover and cook for 5 mins. 
5. Then open the saucepan and mash the strawberries with a masher and then add the cornflour.
6. The cornfour will thicken the compote. Mix well, cover cook for another 3-5 mins in medium flame.
7. Then switch off the flame and let it cool completely.

To frost the Cake
1. Take the cooled cake, and cut it into 2 or 3 halves. I cut it into 3 layers.
2. Then take the whipping cream and add the vanilla and icing sugar. Beat till soft peaks are formed.
3. Now add 1 tbsp of the cooled strawberry compote and add a drop of pink color.
4. Continue to beat the cream till stiff peaks are formed.
5. Refrigerate till we need it.

Assembling the Cake
1. Place the 1st layer of cake on the cake board, soak with sugar syrup.
2. Add a dollop of whipped cream and spread evenly.
3. Then add 1 tbsp of the strawberry compote and spread evenly.
4. Then place the next layer of cake, soak it, add whipped cream and strawberry compote.
5. Repeat similarly for all 3 layers of cake.
6. Add little more cream and crumb coat the entire cake and leave the cake in the fridge for 20 mins to set well.
7. Then remove from the fridge, add more cream to frost the cake completely.
8. Decorate as you wish with a nozzle and some more fresh strawberries.

Notes
1. I baked this cake in a 5 inch tin so I cut the cake into 3 layers. If you bake in a 6 inch tin then you can cut the cake into 2 layers.

3. You can use few drops of good quality strawberry essence too.
