Eggless Vanilla Cake - In this post, we will see how to make a simple
and easy eggless vanilla cake. This is one of my favorite eggless cakes. It is such a soft, moist and delicious cake and it doesn't take much time to make it!
Ingredients
- Maida - 1.5 cups
- Powdered Sugar - 1 cup
- Curd - 1/2 cup
- Vanilla - 1 tsp
- Oil - 1/3 cup
- Milk - 1/2 cup
- Baking powder - 1 tsp
- Baking soda - 1/2 tsp
- Salt -1/4 tsp
- Vinegar - 1/2 tsp
Frosting
- Whipping cream - 1 cup
- Vanilla - 1 tsp
- Icing/powdered sugar - 2 tbsp
Method
1. Pre heat the oven to 180 degrees C for 15 mins. Grease and line a 6 inches cake tin with baking paper or parchment paper.
2. In a bowl, add the milk, curd, oil and vanilla. Whisk well.
3. Add the powdered sugar and mix again.
4.Place a sieve over the bowl and add the maida, baking powder, baking soda, salt. Sieve it into the bowl.
5. Mix the wet and the dry ingredients, don't overmix the batter.
6. Add vinegar and mix again.
7. Transfer the batter into the prepared cake tin. Tap the tin on the counter few times to remove any air bubbles.
8. Bake in the pre heated oven for 45 to 55 mins or until a skewer comes out clean.
9. Once the cake cools, cut the cake into two layers.
10. Frosting - Take the whipping cream in a bowl, add the vanilla and and icing sugar. Beat the cream till it forms stiff peaks.
11. Place the first layer of cake on the cake board and soak with sugar syrup.
12. Spread some whipped cream and place the second layer of cake and soak it too.
13. Do a crumb coat and leave the cake in the fridge for 20-30 mins.
14. After 30 mins, frost the cake completely. Decorate the cake as you wish.
Notes
1. Make sure the curd is not too sour.
2. To make the sugar syrup - add 1/4 cup of sugar to 1/2 cup of water, heat it and let the sugar dissolve. Once it cools down, use it to soak the cake layers.
