Method
Draining method
1. Wash and soak the basmati rice for 30 mins.
2. Heat 1.5 liters of water in a large vessel. Add 1 tsp oil and 2 tsp salt to the water and mix.
3. When the water starts boiling, drain the rice and add it into the boiling water.
4. If using the basmati rice for dum biryani and your recipe calls for 70% cooked rice, switch off the flame in 5 mins. I'm cooking the rice to make fried rice so I will cook the rice till it's about 90-95% cooked (for about 8 mins).
5. Strain the basmati rice and spread it on a large plate to cool down.
6. After cooling the rice, you can use it in the fried rice. If using the rice for biryani, you can use it immediately after draining.
Pressure Cooker Method
1. Wash and soak the basmati rice for 15 mins.
2. Add the rice in the pressure cooker with 1.5 cups of water.
3. Add oil and salt.
4. Close the cooker and keep it on stove, keep the flame on high but don't put the whistle.
5. Once the steam starts coming out of the vent, place the whistle and lower the flame to the very lowest.
6. Cook for 10 mins, don't worry about whistle count. After 10 mins, switch off the flame.
7. Open the cooker after the pressure settles down by itself.
8. Transfer the rice to a plate and cool down. Then use in your fried rice.
