Whole wheat Chocolate Chip Cookies

These chocolate chip cookies are one of the most favorite bakes in my family. My kids absolutely love them and I keep making double batches of it often. Usually while baking cookies, we use 1/2 white sugar and 1/2 brown sugar to give it a good combination of crispy and chewy but since we are baking some healthy cookies, I chose to add1 whole cup of brown sugar (jaggery). If you want you can use some khandasari sugar to give the cookies some crispiness. My kids love the cookies like this, it's slightly crispy and more chewy and tastes awesome.



Ingredients
  • Butter - 1/2 cup (113 gms)
  • Jaggery 1 cup (200 gms)
  • Egg - 1
  • Vanilla - 1 tsp
  • Whole wheat flour - 180 gms (1.5 cups)
  • Baking soda - 1/2 tsp
  • Baking powder - pinch
  • Salt - 1/4 tsp
  • Chocolate chips - 1 cup
  • Walnuts - 1/2 cup

Method
1. Beat the butter and jaggery for 1 - 2 mins. 
2. Then add the egg and vanilla and beat again. Stop the beater in between and scrape the bottom and sides of the bowl.
3. In another small bowl, take the whole wheat flour, baking powder, baking soda, salt, chopped walnuts and chocolate chips. Mix well.
4. Add the dry ingredients into the wet ingredients and slowly combine. No need to add extra milk, mix gently till it all comes together.
5. Refrigerate the batter for 30 mins.
6. After 30 mins, pre heat the oven for 15 mins at 160 degrees.
7. Scoop out a little of the batter and place it on the baking tray.
8. Flatten it lightly and place some chocolate chips on top to decorate.
9. Bake in the pre heated oven for 11-13 mins. Remove the cookies when the outer edge is slightly hard and the middle is still soft.
10. The cookies will continue to cook after it's removed from the oven and will crisp up as it cools down.
11. While one batch is baking, refrigerate the remaining cookie dough.
12. Then bake the next batch similarly.

Storage - I live in an extremely hot place, so I leave the cookies out for 5 days. Beyond that I refrigerate.

Notes
1. Toast the chopped walnuts for a more crispy texture.
2. Refrigerating the batter will harden the butter and prevent the cookies from spreading too much while baking.

11. Stop the beater in between and scrape the bottom and sides of the bowl.

16. Mix it gently. 


17. Refrigerate the batter for 30 mins.




19. Pre heat the oven to160 degrees.


19. After 30 mins, the butter has hardened and the batter is firmer.



20. Using an ice cream scoop, scoop out the batter onto the baking tray.


21. Flatten the batter slightly.


22. Decorate with some chocolate chips


23. Bake in the pre heated oven


24. Refrigerate the remaining batter till the first batch is done.




25. Cookies are done! As it's cooling, it will crisp up. Then bake the next batch. (check video)
