Mini Mango Cheesecakes

Mini Mango Cheesecakes | Easy Mango Cheesecake in blender | Mango Cheesecake - In this post, we will see how to make delicious and cute looking mini mango cheesecakes! These cheesecakes are individual serves and works so well for a party.



Ingredients 
  • Biscuit 100 gms 
  • Butter 3 tbsp 

Cheesecake layer 
  • Gelatin 1.5 tbsp
  • Water 1/3 cup 
  • Cream cheese 150g 
  • Sugar 60g 
  • Mango purée 160g (2/3 cup) 
  • Whipping cream 160g (2/3 cup) 
  • Lemon zest - 1/4 tsp 
  • Lemon juice - 1 tsp 

Mango jelly 
  • Gelatin 1.5 tsp 
  • Water - 1.5 tbsp (for the gelatin)
  • Water - 4 tbsp 
  • Sugar - 1 tbsp 
  • Mango puree - 120g (3/4 cup) 
  • Lemon juice - 1/2 tsp

Method
1. Blend the biscuits in a dry mixee jar. Transfer to a bowl, then add the melted butter. Mix well.
2. Take a 12 cup muffin tray lined with paper liners. Add 1 tbsp of the biscuit mixture in each liner and press well. 
3. Leave in refrigerator till we finish next layer.
4. For the cheesecake layer - Add the gelatin to water and set it aside for 5 mins to bloom.
5. Take the cream cheese in a bowl. Add the sugar and cream and beat well.
6. Add the mango puree and beat again.
7. Heat the gelatin mixture in the microwave for 15 seconds, it will become a clear solution. Set aside to cool.
8. Add the lemon zest and lemon juice to the cheesecake mixture.
9. Add the cooled gelatin and beat well.
10. Bring the muffin tray from the refrigerator, add about 2 tbsp of cheesecake mixture in each liner. Tap the tray to spread the mixture. Leave in refrigerator for 4 hours to set.
11. Glaze layer - After about 2 hours, let's make the top glaze layer.
12. Sprinkle the gelatin in water and set aside for 5 mins for the gelatin to bloom.
13. Then after 5 mins, heat the gelatin for 10 seconds, set aside to cool.
14. Take the mango puree, add lemon juice, water and icing sugar. Mix well.
15. Add the cooled gelatin and mix well.
16. Bring the muffin tray and add 1 tbsp of the glaze over the cheesecake layer. Let it set in the refrigerator for 2 hours, I left it overnight.
17. Decorate the mini cheesecakes with more mango pieces.

14. Take the mango puree, add lemon juice, water and icing sugar. Mix well.






15. Then after 5 mins, heat the gelatin for 10 seconds, set aside to cool.


16. Add the cooled gelatin to the mango mixture and mix well.



17. Bring the muffin tray and add 1 tbsp of the glaze over the cheesecake layer. 


18. Let it set in the refrigerator for 2 hours, I left it overnight.


19. Decorate the mini cheesecakes with more mango pieces.











Notes
1. Adding lemon juice and lemon zest lifts the flavor of the cheesecake.
