I make tomato rice on lazy days! It is so easy and simple to make and great for lunch boxes too. It can also be made with left over rice or can be made with basmati rice.
Today I made this for my daughter so I made with regular boiled rice and I have made without adding any spices. She will not eat if her food is even mildly spicy! Even with less spice, this tasted so good! But you can add more masalas and make it even more tasty.
TOMATO RICE
Preparation time - 10 mins | Cooking time 20 mins | Serves 3
Ingredients
Method
1. Cook rice and keep aside.
2. In a pan, add oil. Once the oil heats up add cinnamon, cloves, bay leaf and cardamom and saute for a few seconds.
3. Add the sliced onions and saute till the onions become golden brown.
4. Add the curry leaves and green chllies.
5. Add the ginger garlic paste and saute for a few more minutes.
6. Add the chopped tomatoes. Cover the pan and cook for a few minutes till the tomatoes are well cooked and mushy.
7. Add the mint leaves.
8. Add the cumin powder, turmeric powder and red chilli powder and salt. (You can also add garam masala powder). Mix the masalas well and allow to cook for a few minutes in medium heat.
9. Add the cooked rice and mix well. Wait for the rice to heat up and switch off stove.
Can have it with plain raita or even potato chips
Notes.
1. Adjust spice level to your preference.
2. You can even make this as a one pot meal by making the masala in the pressure cooker and instead of adding cooked rice, add uncooked basmati rice and pressure cook. Like how we make biryani.

ReplyDeleteI made it Beulah! It's not quite the same as yours because some of the spices aren't readily available here but I had a go and it was really really yummy. Next time I'm going to use a little more spice as I kept it toned down for the kids. I posed it on my site today!
