This bottle of peanut butter was lying around my house and I was thinking of how to use it up, when I chanced upon this recipe and tried it instantly and we were not disappointed! This tasted too good and disappeared quickly. I will be making more of these in the future.
The only thing I will change when I make it the next time is, I will increase the amount of sugar. The amount added in this recipe makes it just sweet but for me I like my desserts on the sweeter side so will be adding a bit more sugar.
I made the same recipe with nutella instead of peanut butter, it was awesome! Check out Whole Wheat Oats Nutella Bars
Ingredients
Method
1. Preheat oven to 180 C degrees. Line a 8x8 baking dish with parchment paper. Set aside.
2. Mix the brown sugar and peanut butter on medium speed until light in color and fluffy, about 3 minutes. Mix in the vanilla.
3. Add in the flour, oats, salt, and baking soda. The dough will be very thick and clumpy, but it will come together.
4. Add the milk and mix well. Fold in chocolate chips and nuts. Use your hands to make sure everything is combined, if needed.
5. Once dough is completely combined, press it lightly into the prepared baking dish.
6. Bake for about 15-17 minutes until the bars are lightly golden and set. Allow to cool completely and cut into squares.
Keep in the refrigerator in a covered container. Bars will be good stored up to 2 weeks.
Notes
1. I have increased the sugar slightly since I felt the bars were not sweet enough. If your okay with mild sweetness, then add 1/2 cup sugar itself.
Until next time,
